Why does cornbread look like a?!

MOIST CORN BREAD

1 c. yellow cornmeal
1/2 c. flour
1 tbsp. baking powder
1 tsp. salt
3 tbsp. sugar
1 c. sour cream
1/2 c. corn oil
2 eggs, slightly beaten
1 sm. can (1 c.) cream-style corn

Beat sour cream, oil, and eggs. Combine dry ingredients. Fold into sour cream mixture. Fold in cream-style corn. Do not overbeat. Pour into 8x8 pan or 9x9 pan. Bake in preheated 375 degree oven. Until golden brown or until bread springs back when lightly touched.Cool; cut into squares.{ Compair this recipe with yours. To see the difference }
Most good corn bread recipes have 1/2 the amount of flour as they have corn meal.
Also they have enough milk or other liquid to make the batter sort of flow NOT THIN
but not thick eather. When the batter is poured into the pan it should be easy to spread, also when pan is jiggled or tapped lightly on the counter top you should be able to see a glaze form on top.{ Corn meal is course and very dry so it takes time for it to rehydrate } That is probably why
your corn bread is forming a mountain it's a little dry, and the mountain beeing on one side or the other could be because the batter was not spread evenly in the pan or
an unlevel oven could be the cause.

MY SUGGESTIONG
Increse the the total liquid
use 1 part flour -- 2 parts meal
Spread batter evenly in pan
bounce pan lightly on counter top
Check to see if oven is level
Bake bread on center shelf of oven

Everyoe loves my corn bread but I am not satisfied that it crumbles so much I want it to be less messy lol, any ideas?
I add sugar to top and make sure I only mix until wet, but is there a trick to keep it more moist or not so crumbly

If it bakes up a lot higher on one side of the pan, your oven isn't heating evenly. Try rotating the pan partway though baking it next time. Also, make sure you put the pan in the middle of the oven to bake it.

sounds like your oven is not level.

it is to dry. or you over baked it

Sounds like you should rotate your bread one time while it's cooking. Your oven is unevenly cooking the bread.
