You need a pressure canner, the directions will be in the box. It's not a complicated process, but you must be very careful to follow the directions exactly to avoid food poisoning. I have canned just about every type of food over the years, and as long as you do it correctly, the food is just fine to eat. It does not last forever, but longer than freezing and it will already be cooked so you can add it to recipes without the bother of having to thaw it out first.

they would never do this... except if the meats are already cooked... but nevertheless they still have the risk of food contamination...

I agree, I would leave canning of meat products to the professionals. To produce a sterile product as in a commercially canned meat product you need to achieve a specific temperature, time and pressure as well as seal to ensure safety.
