Shrimp in tomato sauce.

saute 2 cloves of garlic with some olive oil on the skillet.
add frozen or thawed shrimp, when it starts turning pink, add some white wine and the leftover tomato paste, season with salt and pepper, add some fresh or dried basil. (if you like spicy, you may add some hot sauce or cayenne pepper to taste). cook for another 5-8 min. serve over pasta or just by itself with fresh crusty bread.

Obviously its in a can, therefore you need to find storage for it. I would put it in a small ziploc plastic container but if you dont have one, maybe an old baby food jar. Spagetti sauce takes Tomato paste, as does a lot of other recipes.

Check out www.recipegoldmine.com and do a search for tomato paste. Also, FYI, they now sell the paste in tubes and is much easier to just put back in the fridge for later use. I buy it every now and then when I need it. (use it for Stuffed bell peppers, spanish rice, soups just to name a few)

MEAT LOAF WITH TOMATO PASTE

2 lbs. hamburger
1/4 lb. crackers (crushed)
1 sm. onion, chopped or onion seasoning
2 eggs
1 sm. can tomato paste (optional)
Milk as needed

Combine all ingredients. Mix together adding milk enough to make a nice loaf. Put in pan and bake at 250 degrees for 1/2 hour then 1/2 hour at 300 degrees or until done. Makes a large meat loaf

I recommend that you place the extra tomato paste into an old ice cube tray and when it's frozen, pop out the cubes, store in a freezer bag, and use them when needed (each cube is approx 1 Tbsp). However, if you want to use it up--here's an easy and yummy soup recipe:

Spicy African Peanut Soup

1 Tbsp toasted sesame oil
1 large onion, chopped
2 cloves garlic, minced
1 can (15 oz) diced tomatoes, undrained
1/2 cup tomato paste
4 cups chicken or vegetable broth
1 Tbsp curry powder
1/2 tsp red pepper flakes
1/2 tsp salt
1/2 tsp pepper
1/3 cup peanut butter

In Dutch oven, heat sesame oil over medium heat. Saute onions and garlic until tender, about 5-8 minutes. Add curry powder, salt, pepper, pepper flakes, tomatoes, tomato paste, broth and peanut butter. Heat through, but don't boil. Adjust salt and pepper, if desired. Makes 6 servings.

It stores for ages in a cold fridge- maybe 2-3 weeks. I have been known to use it after like 2 months.. hehe.

Great recipe is ravioli lasagna- make a sauce with the paste (like add water, fresh tomatoes and herbs or whatev) and layer store bought ravioli with the sauce. Top with cheese and yum away!
