Unsalted butter works, I have also had success just using regular cooking oil in a pinch, They don't rise as much but they are edible. If you do use regular oil, use just a bit less then the recipe calls for. Olive oil is interesting and does add some flavour to the dumpling. I would use that if the taste would compliment the dish.

Try a nice grape seed oil, it is healthy and has a nice nutty flavour.

Butter, veg. oil, margarine, crisco. Depends on what type of dumpling you are making.

That's an easy one...cooking oil. Add a little at a time to your flour and season with salt and pepper. Make your dumplings in the usual way.

Palm oil. It is semi solid and comes in a wide mouth jar.

I always use butter.
