Yes, it is a good recipe. It was one created in the 50's or earlier, they were incorporated in the center of the meatloaf and added protein, and a decorative effect, it was also a creative way to stretch your budget, remember there was a recession and women were VERY innovative.
I've heard of a recipe for meatloaf that included hard boiled eggs, but have never tried it. You'll have to let us know how it turned out! Here's a recipe for meatloaf that you might also enjoy:
Jenny's Meatloaf Madness
2 lbs lean ground beef
3 eggs, beaten
1 cup diced yellow onion
1 T minced garlic
3 T Worcestershire sauce
1 cup Italian Bread Crumbs
1 T kosher salt
1 tsp fresh ground pepper
1 15 oz can diced tomatos
10 slices peppered platter bacon
3 T Brown sugar
1 T dijon or yellow mustard
Mix meat, eggs, Worcestershire, salt and pepper. Saute chopped bacon until translucent with onions and garlic. Drain. Add tomatos and cook until slightly reduced. Add half of this to the meat mixture. Add bread crumbs and mix. Form into a loaf and place in baking dish. To bacon/tomato mixture add brown sugar and mustard. Simmer until thickened. Spoon over meatloaf and cover. Bake for 45 minutes at 350 degrees and remove cover. Bake an additional 15 minutes and remove from oven. Let sit for 10 minutes before slicing. Great with mashed potatos and fresh green beans!
Yes. And it sounds like "Morcon," a Filipino meat roll dish derived from Spain. Not as gross at it seems. I've had Greek and Turkish versions of it too.

These people obviously don't know what a scotch eggs are. I do a version with ground beef where you take a hard cooked egg and cover it with a meat loaf mixture and bake it with a tomato sauce on the top.. I believe a real scotch egg is made with sausage meat. So to me it sounds really good. What time are you serving dinner? LOL
