Does anyone know a GOOD VEGAN or vegetarian ramen recipe?!
Answers: Ok, I have ramen noodles and spices. (Nothing freash, only in the bottles you buy at the a local store.) I'm trying to eat more spicey foods, so if its spicey, good, meat free and can be made with kitchen spices then you'll get the ten points. Please no answering stuff like "Yay meat!!" thats just rude.
ORIENTAL SALAD
1/2 head red cabbage, shredded
1/2 head green cabbage, shredded
1/2 c. toasted slivered almonds
3 tbsp. toasted sesame seeds
3-4 green onions, sliced
1 pkg. Ramen noodles, crushed
Seasoning mix from vegetarian Ramen pkg.
Mix all ingredients together and stir in dressing just before serving. Serves 6-8.
I love heat too, add cayenne or your own preference to spices. red pepper flakes hot sauce, use fresh hot peppers,
Ramen noodles are so versatile that anything added is tasty.
I had nothing in house after being gone for a vacation. The night I got home I went out, to hungover and tired to go to store. I took the night befores leftovers and added them to ramen noodles, What were the leftovers, dominoes lol
I took topping form pizza and deboned our hot wings. Looked liek a mess, but it hit the spot was spicey and creamy and not bad at all, got some weird looks, but people trusted me to try it , no leftovers and peopel were asing for seconds, which were none lol. I added a can of french style beans. My toping on pizza was mushroom hamburg and sausage and peperoni.
I know you wanted vegatarian, but I wanted you to see what people can come up with when you think outside of the box.
I would add brocolli and cauliflower, some cheese I love cheese. zuccini and summer squash, egg plant or some sturdy root veggies to keep texture firm. Make small batches and try until you come up with perfect combo.

Slice half an onion into slices and stir fry with noodles until noodles hot and onion cooked but still crisp, add a handful or two of beansprouts and stir fry till hot, stir in soy sauce and serve.
In a separate pan stir fry the other half of the onion chopped with other thinly sliced mixed veg including peppers onion cooked but crispy. Add some sweet chilli sauce. If preferred Add a little water and thicken with cornflour. Serve on top of noodles.
Well, I've never tried it, but I have thought it about it many time! I think you could just cook up the noodles, but a little olive oil on them, and a bunch of different spices that you like. Then - and this is the important part - steam up a bunch of different veggies, like carrots, broccoli, cauliflower, etc. You need to get some nutrients in this meal. Just noodles, while being vegan/vegetarian, are not healthy!
A quick, easy meal that is good for you (or at least better than ramen) is Amy's brand No Chicken Noodle Soup. It's awesome, and it has fake chicken it, so you get some protein.
You should really get a Moosewood Cookbook. Almost all the recipes are vegan, and all are vegetarian. They are easy, good for you, and DELICIOUS! :-)
I am not a vegan, but i do eat tofu and things most meat eaters do not eat. So this is a meat recipe , but when i was making it i thought it would be great with some tofu.
Basically i suggest you make a sauce similar to one that is used in GOULASH... goulash usually has meat, and then you serve it over noodles, but i have made just the sauce before and its still good. Plus it would be great on Tofu, because the sauce is intense and tofu kind of takes on flavors of other stuff.
I got the recipe from the below website. I suggest instead of the 3-4kg of meat or whatever you just use tofu and put it in at the end. Then serve the whole thing over noodles.. And add some tofu sour cream
Basically you will need onions and paprika. good paprika! its sooo good..
Hope you like this...I use this marinade/dressing on fish...and I've used it on noodles too. On noodles, I like to add some shredded carrots or onion, or green onion. It's up to you what veggies (if any) you want to add.
Make a dressing by combining the following:
2 tbsp soy sauce
2 tbsp rice wine vinegar
1/4 tsp crushed red pepper flakes
1/4 tsp black pepper
1/4 tsp onion powder
1/4 tsp garlic powder
1 tsp honey (or sugar since honey isn't vegan)
1 tbsp ginger powder
The slowly whisk in some Asian-style toasted sesame oil (maybe 2-3 tbsp). Toss the dressing with your cooked noodles.
