Salmon croquettes?!
Answers: I LOVE THEM, BUT CAN YOU MAKE THEM WITH FRESH SLAMON INSTEAD OF THE CANNED?IT PROBABLY WOULD TASTE BETTER.
Here's a recipe for you :
1 lb salmon
1 small onion
1/2 teaspoon ready to use chopped garlic
1/4 teaspoon pepper
1 cup breadcrumbs
1 (4 ounce) container Egg Beaters egg substitute
Pam cooking spray
skim milk (optional)
light olive oil (optional)
Place salmon in a medium sized mixing bowl.
If using leftover fresh salmon, flake with fork.
Chop the onion very fine and add to salmon.
Add chopped garlic.
Add pepper.
Add egg beaters.
Stir in bread crumbs.
Stir or knead the mixture until well mixed.
If using leftover baked or grilled salmon, and the mixture is too dry, add a small amount of skim milk.
Form the mixture into patties, cones or ovals.
Spray cooking pan with Pam.
Place croquettes in warm pan and cook until lightly browned.
I love them too, Im sure you can make them with fresh salmon, although I've never tried but I cant see that it would be any different other than being a little more tasty. Just use an egg to hold it together.
You would have to steam cook the salmon first so you can shape the patties or you will have salmon steaks. Sounds like too much trouble.
You can't use an egg to hold it together as fresh salmon is in once fillet piece when not cooked.
If you have a food processor just put a piece of salmon in there.... then it is like tuna. You can make the patties with and egg and and whatever else you like in them.
The canned Salmon allows you to work with the moisture you need in the croquettes. Salmon itself when cooked dries out.
After all the best thing about Salmon Croquettes is how moist they are on the inside and crispy on the outside.
Nothing wrong with canned Salmon.
2 cans Salmon (Alaskan)
2 eggs (one for each can used)
1 sweet onion (finely chopped)
3 stalks celery (finely chopped)
1/2 green pepper (finely chopped)
Italian Bread Crumbs
Juice of Salmon
Salt and Pepper to taste
Dill Weed (Optional)
Drain the juices out of the cans. Reserve. Clean the skin and small bones out of the Salmon. Using your hands break up the Salmon into very small pieces. Add beaten egg, onions, celery, Italian bread crumbs and the juice you reserved from draining. Mix well with your hands to incorporate all the ingredients. If you find it too mushy add more of those seasoned bread crumbs.
Have a cast iron skillet ready with enough oil i the bottom to coat it only. Make patties and start to fry when you have stuck a handle of a wooden spoon in and it bubbles around it. Brown on both sides to a crispy outer shell.
I have never used fresh..I used canned:
