Can i substitute lamb for beef in a stroganoff recipe?!

Oh yes, totally. Suggest you add some harissa or cajun seasoning! oh, and drop the temperature by 20% and cook it 20% longer - lamb is slightly fattier than beef and this will melt the fat more gently to make it very very tender. Use shoulder - its the cheapest and has the most flavour. You could try them on goat as well - that's lamby/beefy and not very expensive.

Sure you could, but it will taste completely different. If everyone likes lamb, then it shouldn't be a problem.
