Doubling a recipe?!
Answers: for a sweet potatoe pie it calls for 1 16oz can of sweet potatoes need two cans so do i double all the other ingrediants such as brown sugar salt cinnamon eggs and butter?

If it says one 16 oz can, the only way you would need two is to buy 8 oz cans.
BUT...if you're making TWO pies, then double everything.

Hun, just on general principles use two cans. You want the pie to be thick, stand up to slicing. I add 2 cans, and taste for sweetness, salt, ect. If you want it thicker, cut back a bit on the milk, not the eggs or other ingredients. If you want it more custardy, add two cans and more milk, or cream. A wet pie isn't what you want. You want a balance. It might seem thick, but will mellow in the crust when you bake it. Now, if you use tofu, add more sugar, less egg, and more cream. Also, add more maple syrup to quell the tofu flavor. But do add both cans.
did you have all ingredients because from my last doubling issue I had accident. No fire but it just didn't look right. there no blind baking involved is there I hope?
Well if pie shell is pre-made, but with sound of it all the other ingredient, sounds your doing it by hand.
How do you equalize it later....like put half and half, maybe its moderation?

Do you have another person helping you. it sounds like a lot of work for one person?

Making the pie crust put in pie pan...blind bake unless I feeling you don't do it for sweet potato pies?

**pretty much double up recipes...for dough bit. and if your go do what I said above..** be sure have clean up crew on stand by and support staff.
In baking doubling is not so cut and dry.
If the pie contains liquid reduce the liquid by 1/4 cup if you mix together.
Or make two seperate batches.
I don't know why put this is my experience with baking.
