Potato Soup?!


Question: I am looking for a good recipe for potato soup. But, I want a simple soup. I dont want one with the vegetables and such. My favorite potato soup (when I am out) is just potato with some cheese and bacon. I have looked online and everything I have found seems to put the "extra" stuff in it. Any ideas? Thanks!!

Easy Cheesy Potato Soup

Ingredients:

1 stick butter
1/2 cup diced onion
6 large (4 1/2 pounds) potatoes, diced
water
2 teaspoons chicken bouillon granules or 2 cubes
12 ounces dairy sour cream
1 pound processed block cheese (such as Velveeta?)
10 slices bacon, cooked and crumbled
1 tablespoon salt
freshly ground black pepper to taste

Preparation:

Cook onion in 1 tablespoon of the butter until wilted. Add potatoes, bouillon and sufficient water just to cover. Boil gently just until potatoes are cooked. (Be careful to not scorch.) Do not overcook until potatoes are mushy. Do not drain after cooking.

Cook bacon while potatoes are simmering. Crumble.

Dice the cheese and stir into the hot potatoes until melted. Add the sour cream and remaining butter. Stir together until combined.

Taste for salt. Top with freshly ground pepper and crumbled bacon.

Garnish with snipped chives if desired.

4-5 large potatoes
1 cup sour cream
2 cans cheddar cheese soup
2 1/2 cups Milk
Salt and pepper
Beef bouillon
Garlic powder

Peel and cut potatoes into cubes. Boil potatoes until soft and drain potatoes. With potatoes in pan add soup and sour cream. Gently mix until blended. Add milk into potato mixture until combined liquid barely covers potatoes. Add salt, pepper, beef bouillon, and garlic to taste. Heat on medium heat until soup is warm enough to eat.
DO NOT BOIL.

Saltine crackers are a good compliment to this soup
I would suggest adding bacon also.

Here's the recipe I use :
4 large baking potatoes (about 2 3/4 lb.)
2/3 cup butter or margarine
2/3 cup all-purpose flour
3/4-2 teaspoon salt (to taste)
1/2-1 teaspoon pepper (to taste)
6 cups milk
1 cup sour cream
1/4 cup thinly sliced green onions
10 slices bacon, cooked and crumbled
1 cup shredded cheddar cheese

Bake potatoes at 350 degrees for 65-75 minutes or until tender; cool completely.
Peel and cube potatoes.
In a large saucepan, melt butter; stir in flour, salt and pepper until smooth.
Gradually add milk.
Bring to a boil; cook and stir for 2 minutes or until thickened.
Remove from the heat; whisk in sour cream.
Add potatoes and green onions; mix well.
Ladle into serving bowls; top with bacon and cheddar cheese.
Enjoy.

Thats my favorite soup... This is how I make it
peel and boil potatoes and a little onion in a decent sized pot. fill only about half with potatoes and water... Boil until potatoes are cooked.. Then add milk (fill up pot until around 2 inches below the top.. Make sure to add some salt and pepper to to pot as well.. ( i use chicken soup oxo or powder for flavoring a tablespoon or so or 2 cubes) You can either use flour and water or cornstarch and water to thicken.. Cornstarch is the easiest.. Add around 3 or 4 tablespoons to a cup and a half of water.. stir until mixed well and add to your pot.. Slowly bring to a boil while stirring until thickens.. If it doesn't get thick enought add a little more cornstarch and water.. Season to taste.. Either add bacon bits and cheese to your bowl or throw in the pot.. if you add the bacon to the pot it becomes soft again.. so if you like it crispy just add to the bowl..If you thicken with flour. use a jar or something to shake with a lid.. Make sure you add the flour to the water not vice versa or you'll get lumps and shake until no lumps and then add to soup pot and bring to a boil.. sounds so good i think i'm gonna make some today too.. good luck..

I do a simple one that everyone loves. Cut up an onion (or a leek) and saute it in the soup pot in a little butter. Add peeled and cubed potatoes, a couple chicken bouillon cubes, black pepper and a bit of garlic. Cover with water and cook till potatoes are done. Add a can or two of cream of chicken soup and set out some shredded cheese and fried/crumbled bacon.

Potato soup is simple. Peel and chop some potatoes. Make sure you rinse them a couple of times to get the extra starch off. Sweat some garlic in a little bit of olive oil. Then add the potatoes and cover them in chicken broth. Add salt, pepper, a bay leaf. While the potatoes are boiling, cook up some chopped up bacon. When the potatoes are done take a hand held masher and just mash until the way you like it. Put it in a bowl sprinkle some bacon and freshly shredded cheddar cheese. (I like to add a dash of cream in mine when it's done.)

Adjust the recipes you have found. Take out what you don't like and just make it to your liking. This is my favorite soup.

2 lbs red potatoes...or what ever kind of potatoes you like.
1/4 lbs bacon
roasted garlic at least 1 whole head
kosher salt to taste
fresh ground pepper to taste
heavy cream 2 cups
chicken stock or broth...I have used both and like them equally.


First render the bacon down until it is crispy,remove bacon. Then add potatoes, onions, garlic to the bacon. Let it saute int the bacon grease a little 4-5 minutes. Then add your chicken stock enough to cover all of the potatoes. Bring to a boil, then turn down the heat until it is simmering. Long enough to make the potatoes fork tender. Then add cream. Let simmer a fem ore minutes. Use a corn starch slurry to thicken to your taste. re season with salt and pepper to taste.

Hearty Potato Soup:

25 min 10 min prep
2 servings

2 medium russet potatoes, peeled and diced
1 small rutabaga, peeled and diced
2 medium carrots, peeled and sliced into 1/8" rounds
1 small onion, diced
1 clove garlic, peeled
1 (15 ounce) can reduced-fat chicken broth
1 (12 ounce) can evaporated skim milk
salt and pepper
1 dash cayenne pepper (optional)
2 tablespoons chopped chives (optional)

Combine first six ingredients in medium saucepan.
Add sufficient water to cover vegetables, if necessary.
Bring to a boil, reduce heat, and simmer until vegetables are tender (about 10 minutes).
Remove garlic clove.
Add evaporated milk and spices.
Simmer for 2-5 minutes.
Remove from heat and serve immediately.
Garnish with chives, if desired.
