chicken breast (boneless skinless). Most people overcook these so they aren't very tasty. All you have to do, is place them on a baking sheet, with a light spray of Pam, coat with your favorite seasoning, (mine is Montreal Chicken, or Lemon Pepper) and bake at 400 for 20 mins. this can be paired with a nice salad, or veggies.
This is the simplest recipe that you can do anything you like with. Sautee up about 1/2 onion, a few cloves of garlic in olive oil salt and pepper. Just let them get soft. To this add 2 cans of diced tomatoes. Let this simmer for about 20 minutes with a little bit more salt and pepper. This is your basic simple sauce.
I basically do four specific things with this basic recipe. All of them are really easy. First, I just toss some angel hair in then some fresh ripped basil and parm cheese.
My next dish has a lot of wow power but basically takes nothing. Only let the sauce simmer for about 15 minutes then add some fresh fish and/or seafood and let it cook. Generally I use halibut, but any firm white fish would do. Also a few shrimp and clams. I add the fish first, let it cook for a little while, just a few minutes, then the clams and as they are beginning to open add the shrimp. Top linguini with the sauce and then arrange the seafood on top of it all. Again fresh ripped basil.
Onther thing I do with this it top the pasta in sauce with a chicken breast that you have pounded about 1/2" thick. Then bread it. First in flour, then in egg, finally in a mixture that's equal parts of parm cheese and seasoned bread crumbs. Sautee this is olive oil on a medium heat about 5 minutes per side. Cut it on the bias, and cover with a little more sauce.
My final dish is chicken sausage that I have sliced and sauteed with sliced onions, peppers and/or mushrooms. Once everything is cooked add a few ladlefuls of the tomato sauce you want it to be really thick. Then hollow out the bottom of a crusty roll. Cut the roll closer to the top than the bottom. Basically you should have a bread bowl. Fill the bowl almost full with the sauce, then add a layer of ricotta cheese and mozz. cheese. Put the top back on and bake at 375 for about 15 minutes. Oh I almost forgot, toast your bread bowls lightly before you add the mixture.
Chicken Spinach Salad
You can take grilled/boiled/seared/or already made chicken breast and cut it up into bite size pieces. Then add some toasted pecans or walnuts, strawberries/blueberries/basically any fruit on sale( I have been using pears and apples), and some balsamic vinaigrette with some little toast brushed with olive oil on the side. Add all of the ingredients above to fresh Spinach leaves. Yum!!!
