How can I store grated potatoes for later use?!


Question: I'd like to grate some potatoes ahead of time (like 3-4 days of inventory), so I can make hash browns in the morning without having to grate them each time (duh...). However when I tried it last time, the grated potatoes turned black in the morning. Do I have to do anything else to preserve it once they're grated? Thank you all in advance.

Yes, there is a way to do this, restaurants grate their potatoes up to 2 days in advance. This is how its done:

Peel the potatoes an cut them in half. As you are working, place the peeled cut potatoes in cold water. This will keep them from turning black.

Boil a pot of water on the stove. Once the water starts boiling, drop the potatoes in. Set an egg timer for 8 minutes. Pull them out of the boiling water and let them drain in a colander. Place them in the fridge and cool them completely. Do not cover them until they are cold. Once they are cold, you can grate them. I guarantee, they will not turn black. This method is called "blanching". It sets the color of vegetables.

Note: The blanching time mentioned above may not be totally accurate. It depends on the size of the potatoes. You do not want the potato cooked all the way through. Cook them roughly al dente. A knife blade inserted into the potato should go through easily but meet some resistance. With practice, you will determine the right amount of blanching time for the size of potato you cut.

I have done that before... Clean them and make sure they are dry and seal them in a bag and freeze them they wont change colors and they dont stick together

You want to keep them dry as possible for hash browns so after you shred them toss them in a bowl with lemon juice to coat them well not to much lemon the acid in the lemon will keep them from turning brown store them in a plastic bag with a paper towel to soak up extra moister hope this helps!!!!!

cook your potatoes first, then peel by lightly scraping them with a table knife while warm. Cool then grate. Not only will you be able to freeze them, they will not turn black and you will get higher quality hash browns than using raw potatoes.
