How do you cook a Cornish game hen with stuffing?!


Question: cornish game hen with stuffing and sherried gravy

6 tablespoons plus 1/4 cup canned low-salt chicken broth
1 1/2 cups dry corn bread stuffing mix
2 teaspoons dried rubbed sage
1 1 1/2- to 1 3/4-pound Cornish game hen, quartered, liver chopped
2 tablespoons dry Sherry
Preparation
Preheat oven to 475°F. Butter 11x7-inch baking pan. Bring 6 tablespoons broth just to simmer in medium saucepan; remove from heat. Mix in stuffing mix and
1 teaspoon sage. Spoon stuffing in 4 equal mounds in prepared pan. Season hen quarters with 1 teaspoon sage and salt and pepper. Press 1 hen quarter onto each stuffing mound.

Bake until hen is golden brown and juices run clear when hen is pierced with skewer, about 20 minutes. Transfer hen and stuffing to 2 plates; tent with foil to keep warm. Do not clean baking pan.

Place liver and remaining 1/4 cup broth in same baking pan. Set pan over medium heat. Boil until slightly thickened, scraping up browned bits, about 2 minutes. Mix in dry Sherry; simmer 1 minute. Spoon gravy over hen pieces and serve immediately.

Cornish Game Hens with Bread Stuffing

1/4 cup butter
1/2 cup finely chopped celery
1 /2 cup finely chopped onion
2 T. dried parsley
8 oz. bread cubes
1 can chicken broth - divided
2 tsp. seasoned salt, such as Morten′s Nature′s Seasons
2 T. dried parsley
2 Cornish Game Hens, giblet packs removed
Preparation -
Melt the butter in a large skillet. Add the chopped celery and onion. Saute over medium heat until barely tender. Reduce heat to simmer. Add 1 cup chicken broth and the bread cubes. Stir until all the bread cubes are moistened, about a minute or two. Remove from heat. Stir in thhe seasoned salt and parsley; set aside. Rinse the hens inside and out; pat dry. Spoon the stuffing mixture into the cavities of the hens. Wrap a small piece of aluminum foil over the ends of the drumsticks on each hen. Place in a shallow roasting pan. Lightly brush each one with additional melted butter. Pour the remaining chicken broth into the bottom of the pan. Roast in a preheated oven at 400o for about 40 to 45 minutes, basting with broth halfway through.

cook it in a clay pot. recipe comes with pot. great taste.

Don't bother stuffing it. Hen is too small. Make your fav stuffing and put it in a pie plate and bake along with hen..........yum!

What "move on" states is somewhat true .... Sometimes I stuff them with wild rice ....

Another way is to cut up some apples, oranges, ginger and garlic and stuff that in there, you don't eat this stuffing, its just for flavor.

Its a great flavor, I use it for ducks too. Enjoy :)

Wild Rice Stuffing for Cornish Hens

Stuffing:
4 C. water
1 pkg. ( 6 oz) long grain and wild rice
1 rib celery chopped
1 small chopped onion
1/2 C. butter
2 1/2 C. seasoned stuffing, crushed
1 1/2 C. chicken broth

Prepare rice according to directions.
Saute the celery and onion in butter for a couple of minutes.
Add to the rice
Stir the stuffing and broth into the rice mixture.

Wash and clean the birds. Rub butter lightly over each bird. Loosley stuff the birds. Stuffing will expand.
Cover drumsticks with loose foil. Place additional stuffing around the birds.

Roast in a 350 oven about 30-40 minutes, uncovered.
