Viking Gammon;
Take four medium sized tomatoes, cut in half and scoop out and discard the seeds; chop the flesh into a fine dice and season with a little pepper. Grill your gammon steaks on one side until nicely done, turn them over and continue cooking for a minute or two,then pile on the tomatoes and return to the grill. Now, grate some cheese..Cheddar or Double Gloucester or your own preference, about half an ounce per gammon steak. As the tomatoes begin to sizzle, take the steaks out from under the grill and heap the cheese on top, return to the grill until the cheese is bubbling and just beginning to brown.serve with baked potatoes and / or salad.
Gammon Chilli
discard the fat and rind from the gammon and then dice it and place in a pan of cold water, bring to the boil and cook for five minutes then drain and set the meat aside..this is to remove some of the salt. Fry a couple of thinly sliced onions in vegetable oil until soft, add the meat, a pinch of dried herbs and a half tea-spoon to a tea-spoon of chilli powder according to preference. The pour in a can of chopped tomatoes and their juice and bring to the boil, simmer gently for ten minutes and then add a well drained and rinsed can of red kidney beans; test for taste..if there is too little then you can always add a vegetable stock cube at this stage or even a can of baked beans which will also calm the heat a little if you want to do so; cover and allow the pan to cool for half an hour whilst you sort out the rice or french fries (Addictive with chilli) and salad if wanted. By now the flavors should have married and all you need to do is warm the chilli again and serve. I always have a dish of grated cheese on the table to sprinkle over the chili, especially with fries. I know that we usually make chilli with beef and kidney beans, but in mexico this was a peasant dish and you used whatever beans and meat you had on hand..far more likely to be pork than beef and just as likely to be pork that had been preserved in some way.

Bacon sandwich

Dice the meat and stir fry it with some mixed veg, onions and peppers. Boil some rice and add chicken stock cube ro two to the water you boil it in and then add rice once cooked and drained to the stir fried meat and veg. Add some soy sauce and serve hot. Delicious

What is gammon steak.........?

Never heard of it.

nice slice of gammon,a few chips,pineapple on top of gammon as well as a nice runny egg,and a few slices of bread and butter...dont be so idle,get cooking.

How about cutting the gammon in to strips, fry with some onions, garlic & tomatoes a small amount of seasoning & herbs of your choice & serve with potato wedges done from scratch in the oven....??

slice it up finely, fry it with mushrooms and onions, make or buy a creamy cheesy sauce, make up pasta, and serve all together

Gammon and cranberry roulade

Serves 1



Preparation time less than 30 mins

Cooking time 10 to 30 mins







Ingredients
1 gammon steak
55g/2oz cranberries
1 tbsp oil
110g/4oz sheet of puff pastry
1 egg, beaten
For the parsnip and broccoli
1-2 tbsp olive oil
1 parsnip, peeled and cut into wedges
? broccoli head, cut into florets
85ml double cream
1 tbsp fresh herbs, chopped



Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Bring a pan of water to the boil.
3. For the parsnips, heat the oil in a griddle pan until hot and roast the parsnips for a few minutes, to colour.
4. Transfer the pan to the oven and roast for 10-15 minutes.
5. For the gammon, lay the gammon steak on a clean flat surface and sprinkle with cranberries.
6. Roll up and secure with a cocktail stick.
7. Heat the oil in a pan and sear the gammon for one minute on each side. Remove from the pan.
8. Roll up the gammon in the pastry and brush the edge with egg wash to seal.
9. Place on a baking tray and cook in the oven for 10-12 minutes, or until golden.
10. Cook the broccoli in the water for 4-5 minutes, or until tender and drain.
11. Heat the cream in a pan with the herbs and reduce over a gentle heat for a few minutes.
12. To serve, transfer the gammon roll onto a plate and serve the broccoli and roast parsnips alongside.
13. Drizzle the cream glaze over to serve.
