Can someone give me a chicken recipe under 600 calories with under 4grams of satuated fat?!
Answers: Parboil the chicken, then lightly grill in EVOO with whatever seasoning you prefer and serve over rice or 1 c noodles.
Just use boneless skinless chicken breast marinade in lemon and season w/ lemon pepper and salt and grill on George Foreman grill.
Ingredients
Easy Sour Cream Chicken Enchiladas
3-4 cups Cooked chicken (or turkey), shredded or cut into 1/2 inch chunks
7 oz. Can chopped ortega style chiles
16 oz. Sour cream
1 can Cream of chicken soup
3 cups Shredded jack or cheddar cheese (plus a little extra to sprinkle on top)
10 Flour tortillas
Preparation
Mix ortega chiles, 3/4 of sour cream (save rest for garnish) and soup. Then take approximately 1/4th of this mixture and mix with cut up chicken. Fill flour tortillas with a scoop of chicken mixture and handful of cheese. Roll enchilada style. Take another 1/4th of sauce mixture and spread in bottom of greased baking pan. Place enchiladas on sauce. Cover enchiladas with remaining sauce and cover baking pan with foil. Bake at 350 degrees for approximately 30-35 minutes. Remove foil, sprinkle with remaining cheese and bake another 5 minutes. Garnish with tomatoes, lettuce and sour cream if desired.

Fettuccine with Chicken and Broccoli Rabe
Makes 4 servings
1 bunch of broccoli rabe, cleaned and chopped
6 ounces spinach fettuccine
4 teaspoons olive oil
Four 4 ounce skinless boneless chicken breasts
1/2 teaspoon garlic and herb seasoning
1 red onion, thinly sliced and separated rings
4 garlic cloves, minced
1 head radicchio, shredded
2 tablespoons grated Parmesan cheese
1/4 teaspoon freshly ground pepper
1/4 cup chopped basil
In a large pot of boiling water, cook the broccoli rabe 2 minutes. With a slotted spoon, transfer to a bowl. In the bowling water, cook the fettuccine according to package directions, drain.
In a large nonstick skillet, heat 2 teaspoons of the oil. Add the chicken and sprinkle with the herb seasoning; saute until cooked through, 4-5 minutes on each side. Transfer to plates.
In the skillet, heat the remaining 2 teaspoons of oil; saute the onion and garlic until tender, 3-4 minutes;. Stir in the broccoli rabe and radicchio; cook, stirring frequently, until tender, 4-5 minutes. Add the fettuccine, then sprinkle with the cheese and pepper. Serve alongside the chicken, or place the chicken a top of the fettuccine and sprinkle with the basil.
