Can someone give me some ideas for dinner?!


Question: I have a pretty good stocked pantry, and I have red and white onions, garlic, colliflower, canned artichokes, sundried tomatoes, Scalllops, and cooked shrimp,..... tons of pasta, and 2 huge tomato's, plus tons more...

Anybody have any great ideas for some of those ingredients?

I am not familiar with cooking and prep of scallops, except to wrap them in bacon and broil... but I would really like to use them as the main course..

PREPARE THE PASTA, SAVE SOME OF THE PASTA WATER, PAN SEAR THE SCALLOPS IN A LITTLE OLIVE OIL AND GARLIC, I LIKE TO USE A LITTLE BUTTER ,COMBINE PASTA AND SCALLOPS WITH SALT PEPPER ,SOME PARMESAN. On rachel ray yesterday she took scallops and shrimp and browned them in butter w seasoning and made thai noodles it looked so YUMMY!

meat sauce with your pasta also add the sundried tomatoes in the meat sauce chopped up

That idea for scallops sounds good. You can serve them with a pasta dish.
For your pasta sauce, saute the onions and garlic until they're a bit sweet (browned), then turn down the temp and add chopped sun dried tomatoes, artichokes and let slowly cook. If you have some red wine, add a bit of that, and spices like oregano and basil.
When the pasta (and everything else) is almost ready, add some grated Parmesan cheese to the sauce and chopped fresh tomatoes.

Serve together and sprinkle more fresh parm and freshly grated pepper, if you like.

I am having spaghetti casserole.

i love to sautee scallops in minced garlic and butter with a little lemon and pepper seasoning, then i put it over linguine noodles. Its simple and tastes great, But you have to be careful not to over cook them or they just dont taste right.

so when is dinner?

make an Alfredo pasta with the shrimp and scallops on it.
here is how you prepare scallops:
put a little olive oil in the pan, with some garlic that is diced in little pieces for flavor then cook the scallops til they turn white.
save the olive oil from this to heat the shrimp in
heat the shrimp with the same oil you used for the scallops
put some of the shrimp and scallops with the sundried tomatoes on top of the pasta.
use a jar of Alfredo sauce for on the pasta.

Creamed Scallop and Shrimp Linguine:
2 lb. Bay Scallops(with juice)
1 cup light cream
1 lb. fresh water shrimp ( 21-25 )
2 cups fresh pea pods
1/2 cup sliced spring onions
6 cloves minced garlic
5 Tbsp.extra Virgin olive oil
1/4 cup fresh chopped parsley
1/4 cup fresh chopped basil
1/4 tsp. dried red pepper flakes
1/4 cup oil-packed sun dried tomatoes
1 small plum tomato, chopped
10 oz. linguine, cooked and drained
1/4 cup Parmesan cheese

Cut scallops in 1/2 and clean shrimp; set aside. Cut pea pods in 1/2; set aside. Cook onion and garlic in oil at med-high for 30
seconds. Add 1/2 of the scallops, shrimp, and all spices. Cook 3 minutes, stir and remove. Repeat with remaining scallops and shrimp.
Return to skillet and add pea pods and tomatoes. Stir 2 minutes.Add cream heat till warm add Parmesan cheese Toss scallop mixture with linguine.
