Probably exactly why.... less egg and more butter will make a flatter crispier cookie, where if you had used the extra egg and less butter, it would have been a bit puffier and maybe a bit softer.

Im wondering if you know what macaroons are...?? They start with a meringue, and have a lil flour and shredded coconut in them. They arent flat at all. If your cookies were flat, which I am suspecting they were with the extra butter, it is the butter that caused this. Choc chip cookies are a cream method cookie, meaning the butter and sugar are creamed together first. The eggs are added second. If you add extra butter, when the cookies melt in the oven, the butter in them melt too, taking the sugar with it, forming a sort of caramel. Too much butter and the sugar will liquify, causing your cookies to run. Eggs are a protein. They coagulate when cooked, and bind the cookies' ingreds so you dont have cookie soup when they come out of the oven. Hope this helps.
