I love Hawaiian Chicken!

Place chicken in baking dish. Cut up onions and red and green bell peppers. drain a can of chunk pineapple into a separate bowl. Add the pineapple chunks to the dish. With pineapple juice mix 1 tablespoon brown sugar, 1 tablespoon soy sauce, splash of vinegar and 2 tablespoons of cornstarch. mix and pour over the chicken. Bake at 350 for an hour. Serve over rice.

A family favorite!

ROASTED RED POTATOES
INGREDIENTS
6 to 8 small red potatoes, quartered into 1/2-inch pieces
1 tablespoon olive oil or garlic-flavored olive oil
1 tablespoon minced fresh rosemary leaves
1/2 teaspoon salt
1/4 teaspoon ground black pepper
DIRECTIONS
Preheat oven to 400 degrees F.
Combine all ingredients in a large bowl and toss to coat potatoes. Transfer potatoes to a large baking sheet or shallow roasting pan. Roast 25 to 30 minutes, until tender and golden.

INGREDIENTS
1 pound fresh asparagus spears, tough ends trimmed and discarded
4 scallions, root end trimmed
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
DIRECTIONS
Preheat oven to 400 degrees F.
Place asparagus and scallions on a baking sheet. Drizzle with oil and sprinkle with salt and pepper. Roast 25 to 30 minutes, until tender. Wrap individual portions of asparagus with scallion to tie into bundles.

chop it up put it in a pan with a little olive oil,garlic and some onion and cook it for about 15. min then you can put it on a salad or in a tortilla or just eat it by its self....or chop it up cook it and cook some instant rice add cream of mushroom soup and cooked broccoli..... heat it until its warm add a little cheese and it would be really good

Salt and pepper the Chicken breasts, then sautée in a hot pan with olive oil and a little butter. Take them out before they are fully cooked. Then sautée some pearl onions, mushrooms, fingerling potatoes with some fresh thyme. Deglaze with a little stock (& wine optional). Add the chicken back to the pan and finish in the oven.

Enjoy with some rustic French bread.

Cut up breast in bite size pieces, bake in a buttered casserole dish with a can of either cream of chicken, mushroom or broccoli soup, 1/2 cup instant rice and 1/2 can milk. Bake @ 350, uncovered for 45 mins. Buttered crumb topping is optional.

This is as easy as it gets.

Get a sheet of aluminum foil and place a chicken breast in it. Top it with your favorite topping (can do different toppings for each person). Salsa, cheese, BBQ sauce...the list is endless. You can even place vegetables in there if you want. Fold the foil up like an envelope and either put on the grill or in the oven (on a cookie sheet) and bake until the chicken is thoroughly cooked.

I cut my breasts in half lengthwise so they are thinner and cook faster. But take 2 breasts, cut in half, place them into a frying pan with some sliced onion and chopped garlic. Fry till the chicken is cooked on the outside, then add some chicken broth (about 1 - 1 1/2 cups) and let the chicken simmer in the broth till the chicken is completely cooked.

The wife and I loved this and have since cooked it numerous times. We also cut or chicken breast in half whenever we cook them. They're not dry like they would be if you cooked them whole. We cook them on the grill, fry them, and broil them and they are always moist.

Chicken Cordon Bleu

Chicken breasts
ham slices
Swiss cheese slices
season with salt, pepper, garlic powder
1/2 C. bread crumbs with 2 T melted butter
1 T. vegetable oil

Pound chicken until flat.
Place one slice ham and cheese on each.
Season.
Rollup chicken and secure with toothpicks
Brush with oil.
Spread with buttered bread crumbs.

Place on baking dish and bake at 350 for 45 minutes.

You asked for easy, so here's easy. Cut the chix up into 1 inch cubes, sprinkle S&P.
Heat olive oil in a skillet and saute chix until it has nice color-only about 2 minutes.
Place chix in oven at 350 degrees to finish.
Here's where I cheat. I get those Lipton noodles or rice dishes and make a package. You can cut up some carrots or add some peas...whatever you like. Just heat up the veg...let's say a small can of peas. Heat the peas. When noodles or rice dish is done, add the peas then chix on top. You'll be surprised how easy this is and it makes a nice dinner. Those packets take like 12 minutes. When it's finished, it looks impressive. Your guests will think you've been slaving over a stove for hours!

pollo au pepperane verde (chicken with roasted green peppers, but use red as well)

dice 4-6 chicken breasts, equvilant to a whole chicken
crush one garlic
roast 4 peppers, deseed deskin and slice into strips
dessed, deskin and chop 600g tomatoes
175ml wine
seasoning
2tbsp olive oil

1. prepare peppers, eith by a grill or over gas ring remember to turn until evenly charred and blistered
2. prepare tomatoes deskin by cutting a cross into the skin plunging in hot water leave a few seconds then the skin should peel
3. heat oil and garlic until garlics browned, remove and discard garic
4. add chicken and cook till brown all over
5. season to own specifications, i dont use a lot
6. pour in wine and cook till evaporated (try a little chicken if cooked thoroughlly, a small piece you may have chucked in this is tasty already)
7. stir in peppers and tomatoes, simmer over medium 20mins sturring occasionally. until chickenis tender and cooked throughout

This is one of my favorite and most easy chicken dinner recipes!
Preheat your oven to 375.
Spray a skillet with cooking spray and brown chicken breast on both sides on hi heat. About 2-3 minutes on each side. Once browned, place chicken in a casserole dish. Drain a can of green beans and throw over the chicken. In a seperate bowl combine two cans cream of chicken, one can of cream of mushroom and 1/2 cup of milk. Pour mixture of the chicken covering it evenly. Sprinkle shredded cheese over the top, and cover in foil. Bake for about 45 minutes or until chicken is done. Let cool for about 10 minutes to allow sauce to thicken.

Chicken schnitzel with mashed potato and garlic-steamed vegetables is easy and quite fun to make.

4 eggs (enough for roughly 2 breasts of chicken, if you are using more, just add extra eggs)
Breadcrumbs
3 Potatoes
1/2 cup of Milk
2 tbs Butter
2 Cloves garlic
zucchini/broccoli/carrots/beans (whatever vegetables you like most)

1. With a sharp knife, slice your chicken breast width-ways, as thin as you can manage (The thinner the crispier).

2. Wisk your eggs on a plate, adding a teaspoon of water to make them a little fluffy.

3. Lay tinfoil over your cutting board and pour breadcrumbs (the foil makes for easy cleanup!), dip your cut chicken slices into the egg, then place onto breadcrumbs and turn until evenly coated. You can do this a few hours prior to cooking to save yourself some time - just cover and leave in the fridge.

5. In a large skillet, add roughly 3 tablespoons of butter, and two tablespoons of oil over medium-to-high heat. Once melted, add your chicken pieces. They cook quite quickly, and you know they're done when they are golden and crispy. Add more butter/oil with each batch.

4. Dice potatoes and place into large pot. Cover with water, add salt. Bring to boil, then reduce heat to medium - checking often until potatoes are soft and break easily when pressed with a fork. Drain and put back into pot. Add milk, butter and a clove of diced garlic, mash until soft and fluffy.

In a small saucepan, add a clove of diced garlic. Cut your vegetables into bite-sized potions and add to saucepan. Add a teaspoon of salt and roughly 1/2 cup of water. Bring to boil, then reduce heat to as low as your stove top can manage. Cook a further 5 minutes before removing from heat.

Serve and enjoy!

Left over chicken tastes GREAT cold on sandwiches with a splash of creamy ceaser dressing.
