Frittatas!! They are very easy & also healthy:

Frittata using either eggs or egg whites: you can make them as simple or complex as you wish. This link has fantastic recipes:

You have two choices one is to make pancakes using either Bisquick or Krusteaz pancake mix and the other are omelettes.

Cheese Omelet (Cooking for 2)

2 eggs
2 teaspoons butter or margarine
1/4 cup shredded Cheddar cheese
Salt and pepper, if desired

1. Beat eggs in small bowl with fork or wire whisk until yolks and whites are well mixed.
2. Heat butter in 8-inch skillet over medium-high heat until butter is hot and sizzling. As butter melts, tilt skillet to coat bottom with butter.
3. Quickly pour eggs into skillet. While rapidly sliding skillet back and forth over heat, quickly stir eggs with a fork to spread them continuously over the bottom of the skillet as they thicken. When they are thickened, let stand over heat a few seconds to lightly brown bottom of omelet. Do not overcook—the omelet will continue to cook after being folded. Sprinkle with cheese.
4. Tilt skillet and run a spatula under edge of omelet, then jerk skillet sharply to loosen omelet from bottom of skillet. Fold portion of omelet nearest you just to center. Allow for a portion of the omelet to slide up side of skillet. Turn omelet onto warm plate, flipping folded portion of omelet over so far side is on bottom. Tuck sides of omelet under if desired. Sprinkle with salt and pepper.

Ham and onion omelette

1. take one onion and mince it
2. cut ham into little pieces size of your nail (i prefer spam)
3. Saute the ham and onion until brown
4. take about 3 eggs and crack em open in bowl and whisk it
5. after the eggs blended together pour them into pan.
6. just let the egg stand there in a circle shape until bottem hardens but not the top of the egg.
7. pour sauted ham and onions into top of egg.
8. put spatula under one side of egg and flip the egg into a half circle.
9. you can wait until each side of egg is a little brown and eat :D

try these:

Cheese Omelet

Difficulty: Easy
Prep Time: 2 minutes
Cook Time: 2 minutes
Yield: 1 serving

3 large Grade A eggs
2 slices American cheese
2 tablespoons vegetable oil

Equipment: 9-inch non-stick skillet and an immersion blender
Add oil to the skillet over high heat, and heat it until small hairline ripples appear on the surface of the oil.

Break the eggs into tall glass or frappe cup and whisk to blend for 1 minute.

While moving the skillet in a circular motion, pour in the eggs. Continue to move the skillet in a circular motion, allowing the outside of the eggs to cook and fluff up. When the outside edges have firmly cooked, flip the omelet and cook on the other side for approximately 30 seconds. Keep moving the pan in a circular motion, but not as often as before it was flipped. (Too much movement at this time will cause the omelet to fall.) Flip the omelet once more to finish cooking--no more than 30 additional seconds.

Overlap 2 slices of American cheese in the center of the omelet in a diamond shape.

Fold the omelet in half, being certain to cover the cheese slices, and slide it onto your plate.

Gonzo Grapefruit

Difficulty: Easy
Prep Time: 5 minutes
Cook Time: 3 minutes
Yield: 4 servings

2 whole grapefruits (pink if available), halved
4 ounces vodka (strictly optional, but you know that Hunter S. Thompson would have it this way)
6 teaspoons brown sugar

Set 1 oven rack on the highest level, then preheat broiler.
Using a small serrated knife, cut around grapefruit to separate the fruit from the skin and the segments from each other (just like your mother did for you). Pour out a bit of the grapefruit juice to make room for the vodka.

Drizzle 1 ounce of vodka over each grapefruit half and let it seep between the slices (I doubt your mother did this for you).

Immediately before broiling, sprinkle 1 1/2 teaspoons of sugar over the top of each grapefruit half.

Place grapefruit directly on rack under the broiler and broil for 3 minutes. Garnish with a raspberry or strawberry, if available. Serve immediately.

Eggs in a Nest

Prep Time: 5 minutes
Cook Time: 3 minutes
Yield: 1 serving

1 slice bread
1 teaspoon butter or margarine
1 egg
Salt and pepper, to taste

Use a 3-inch cookie cutter to cut a shape out of the bread. Melt the butter in a griddle or frying pan. Place the bread in the pan and break an egg into the hole. Lay the cutout shape in the pan wherever it will fit and toast until golden brown. Sprinkle the egg with salt and pepper.
When the egg is cooked on the bottom and before the bread becomes too brown, flip the egg nest to toast the other side and finish cooking the egg, about 1 minute. Serve with toasted shape.

This is so easy you can make it the night before and cook it in the oven in the morning. You may want to use more eggs if you like I do. You can spice it up the way you like and maybe use more bread too. I use salt and pepper and red pepper flakes. I have also used diced red peppers and onions and potatoes (you have to cook them first tho)

* 4 slices bread
* 12 to 16 ounces bacon or sausage, cooked and drained
* 2 cups shredded cheddar cheese
* 6 eggs, beaten
* 2 cups milk
* 1 teaspoon dry mustard

PREPARATION:
Grease the bottom of a 9"x13" pan. Tear up 4 slices of bread and place in the bottom of the pan. Sprinkle cooked crubled bacon or sausage over bread pieces. Sprinkle cheddar cheese over the bacon or sausage. Mix eggs, milk and mustard together; pour over casserole.

Bake at 350° for 35 to 40 minutes.

plain unsweetened yogurt with fruit and maple syrup and some oatmeal sprinkled on top.

Since the weather is getting colderm why not have some oatmeal with yogurt and cranberries.
Or if you have tortillas, you can make an egg, bacon, and cheese wrap.

Okay, this is like, My favourite easy meal of all time!!!!!
Here are the ingrediants that you will need:
#1. 2 or 3 potatoes.

Lastly, Put everything in the microwave on high 30-35 sec.

Take out & Enjoy!!!
Good luck & Hope that I helped!!!
