Brown rice pasta!
It's delicious and you can make all kinds of dishes from it!

my mother used to make rice & raisins, add a bit of sweetener (sugar, stevia, splenda whatever) and it's a good tasty slightly nutritious desert. :D (use margerine or whatever you use normaly in this instead of butter.)

also, try chicken or beef broth in and add a few veggies that you know he likes..it's good. simple .

While travelling in Costa Rica several years ago, I quite often had a breakfast dish called Gallo Pinto. You lightly saute about one tablespoon each dice of red onions & sweet red peppers in oil, then add about one cup of cooked rice and 2 tablespoons of cooked black turtle beans. It is served as is, or with a poached or fried egg on top.

Another rice dish I like for breakfast is stir fried rice with vegetables and tofu. All you need to do is stir fry a few vegetables of your choice, add a few small cubes of firm tofu, and continue to stir fry, then add about a cup of cooked rice and stir fry until the rice is heated. Serve. I like to add a little Tamari or soy sauce, or tahini.

I like Mexican Rice. Make minute rice a normal but use half salsa and half water instead of all water. You can also and cooked chicken. Makes a great side dish. And its very easy to make.

For a break from the rice, I'm sure you've tried quinoa. It cooks the same way as rice in 20 minutes. It is a complete protein! And can be flavored in any direction you prefer.

I like to mix in olive oil and braggs with whatever veggies I have/ or turkey with curry powder.

Another great way to get carbs is from purple sweet potato. Never grows old!
