Freezer Meal ideas?!


Question: We're expecting our first child very soon, and would like to have some easy meals to put in the freezer....

I'm sensitive to dairy.. but can get away with using butter for some odd reason. Milk, cheese, sour cream, etc... are big no-nos, though.

Any thoughts? Suggestions? recipes?

That is exactly what I did when our first was born. If you have a FoodSaver, or know someone that has one, borrow it. Using the FoodSaver, you can basically freeze anything because it will suck all the air out of the bag, saving your meal from freezer burn.
Items that I made and froze: Lasagna, Chili, Homemade Chicken Noodle Soup, Grilled Chicken with Feta Cheese Lemon Juice and Red Peppers, Meatloaf, Stuffed Shells, Asian Stir-Fry, French Toast, Etc.
Just remember that if you are going to freeze soups, freeze them first in a rectangular container overnight, then pop them out and put them in a freezer bag.

This is our favorite!
chicken and dumplings
2 chicken breasts cut up
mixed veggies or whatever you like
one can cream of chicken
one can cream of celery
brown chicken, add soups and one soup can water, stir veggies in and simmer all for 15 minutes, meanwhile make dumplings;
1 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon dried thyme
1 teaspoon dried parsley
1 teaspoon dried oregano
3 tablespoons butter
3/4 cup water
DIRECTIONS
In a bowl, mix the flour, salt, baking soda, baking powder, thyme, parsley, and oregano. Cut in butter until the mixture resembles coarse crumbs. Gradually add milk, using just enough to form a thick batter.
Drop by rounded tablespoons into your simmering soup or stew, cover, and allow to cook 15 minutes

Anything that you make can be frozen as long as it is stored properly with minimal air flow.

Smart ones entrees, you can pick out which you like of a large variety.
