What goes well with breakfast casserole?!


Question: I want to do a very special breakfast tomorrow. (We've had a really bad time lately with several family members, so we just need a little extra TLC for ourselves.) Found this wonderful-sounding recipe for breakfast casserole, but I don't know what would go well on the side. (Blueberry muffins? Garlic cheddar cheese grits? Fruit?) Since all we usually do is cereal or toast, I'm not sure what would go well with this. Suggestions?

"An easy, crowd-pleasing breakfast casserole with a crouton and Cheddar cheese base. This recipe calls for bell pepper and bacon, but you can have fun playing with the ingredients to dress it up or down, depending on the occasion."
INGREDIENTS:
12 slices bacon
1/4 cup butter, melted
3 cups croutons
2 cups grated Cheddar cheese
6 eggs 1 3/4 cups milk
1 bell pepper (any color), diced
1 tablespoon prepared mustard
salt and pepper to taste

DIRECTIONS:
1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
2. Preheat oven to 325 degrees F (165 degrees C).
3. Melt butter in the microwave, or in a small pan on the stove over low heat. Spray a 9x12 inch baking dish with vegetable spray. Place croutons in the bottom of the dish, and drizzle with melted butter. Sprinkle with grated Cheddar cheese.
4. Crack the eggs into a bowl, whisking to break up the yolks. Add milk, peppers, mustard, salt, and pepper, and beat until well-combined. Pour over the croutons and cheese, and sprinkle with crumbled bacon.
5. Bake in the preheated oven for 40 minutes. Remove from oven and allow to stand 10 minutes before serving.

Fresh melon, pineapple or strawberries would be perfect. That's all you really need since you have meat, eggs, and bread (croutons) in the casserole. But, the bread kind of dissappears in the casserole, so bread-loving men often feel slighted if there isn't bread in sight. Your idea of blueberry muffins, or coffee cake muffins would be good. Croissants also would be yummy, or biscuits if you want to serve the garlic-cheese grits and make it all southern style with ambrosia (I add Ammaretto to mine). If you want it indulgent-then I would combine Champagne with peach nectar(the name of this drink escapes me at the moment), or Bloody Mary's and coffee to round it out. Can I come?

A casserole is usually a meal in it's self. It looks like you have something from each food group in it, so try some fruit.
Strawberries, bananas, kiwi, grapes etc.. Sounds really good..

I would say some fruit...maybe toast.

Fruit! You can never go wrong with fruit for breakfast. Orange juice and coffee are welcome additions as well. As far as breads or other things, maybe hashbrowns, but thats only if your family likes hashbrowns.

I would make a sweet to go with your savory casserole, such as a coffee cake, banana bread, french toast... The I would serve fresh fruit salad and some coissants along with Mimosas (champangne and OJ)....yum!

Try some warm grilled or roasted fruit, like cinnamon apples, grilled plums/peaches, bananas, or even honeyed pumpkin.

I agree - fruit would be ideal. A light side to offset the heaviness of the casserole. Don't forget the Mimosas!!

I would try to add something like the grits you mentioned, or hash browns. Or you could do a bagel, english muffin or just toast. If you wanted something on the lighter side, maybe some fresh fruit or a fruit smoothie instead of juice.

about all you need with that is some good old home made biscuits.and maybe some fruit,or hash browns,or toast for people that don't like biscuits.

I think that casserole needs a pound of ground, cooked breakfast sausage added to it!

Any sort of muffin would be nice
and a fresh fruit salad
or stick w/ the savory things and make biscuits.

With three cups of croutons as a base you wouldn't want any more bread products.
The size per portion 4 1/2"x 3" isn't all that big, if it is for eight people.
It will depend on if you are big breakfast eaters.

How About Ribeye Med. Rare. Marinated Fresh 1/4 Mushrooms. 4 Eggs Scrambled add butter And Green Onions. 2 nice slabs of Fresh Sourdough Toast. With a very TALLL Ice Cold Glass of rich chocolate Ovaltine :)
