Plan a meal!?!?!?!?!?!


Question: So I need to make 2 more meals this weekend for school and i need to count how many calories i make and things even for little things like syrup and butter and everything so i was wondering if you had any ideas for meals that i could make. They cant be things like grilled cheese and macaroni (unless its a side) it has to be something thats not really easy....and it needs to have about 3 sides 2 at least 5 at max.
and it needs to be easy to count calories

It's always simple to calculate calories if you know the calorie count of the raw ingredients. It's a pain, but you just figure out how many serving sizes you use in the total recipe, multiply by the per serving count (it's on the nutrition information section of the packaging), then divide by the number of servings the total recipe makes.

That said, here are a couple of tasty ideas that can be as healthful or decadent as you want:

Meal number one: lasagne or other casserole-type pasta dish. Betty Crocker's cookbook has a great recipe. For sides, you have a lot of options: salad, soup, bread, olives, bruschetta... the sky's the limit. You can alter the nutritional values in a number of ways by putting in less meat/cheese, more vegetables, using lean beef instead of sausage, and so on. Same with the bread. Real Italian crusty bread with olive oil and herbs/salt for dipping is healthier than white flour garlic bread made with real butter.

Meal two: Brunch can be pretty easy. You get to have breakfast items AND lunch items there, so you can choose from a lot of stuff. Parfaits made of yogurt, granola, and fruit work well, or you can divide that up into fruit as one side, yogurt as another, and have granola with milk as your main dish. Toss in a piece of whole wheat toast and some eggs or other member of the protein family and you're all set.

for dinner you could marinate chicken breast in itailan dressing, have it with steamed carrots (put them in the microwave with a bit of water, with garlic bread and brown rice

Cereal, nana and toast.

pork chops, collard greens with fat back (salt pork), macaroni and cheese, garlic and cheese bisquits and a six pack...(or two).

My mom makes this recipe called chicken and pasta.
penne pasta (1 box)
chicken (probably about 4)
1 bottle italian dressing
1 packet italian seasoning


Grill chicken. Cook pasta according to box. Mix the dressing & seasoning in a large bowl. put drained pasta into bowl. cut chicken into pieces & put that in the bowl too. mix together. Done! it's great with a veggie salad & fruit salad on the side. that might be too easy, but it's a GREAT recipe. every1 loves it!!

this 1 might be better for ur project-

Chicken Piccata
~?~
2 boneless, skinless chicken
flour
2 tablespoons olive oil
1/4 cup dry white wine
1 teaspoon garlic, minced
1/2 cup chicken broth
1 tablespoons fresh lemon juice
1 tablespoon capers, drained
2 tablespoons butter

fresh lemon slices & parsley for garnish (optional)


1.cut chicken in half, & pound thin. (about 1/4 inch). season chicken with salt and pepper and dust with flour.
2.saute chicken in pan with olive oil, 2-3 minutes on each side. transfer chicken to warm platter. (i like to keep it in the microwave -power off.)
3.deglaze pan with wine and add garlic.
cook until garlic is slightly brown and liquid is nearly evaporated.
4.add broth, lemon juice, and capers. return chicken to pan and cook on each side for 1 minute. transfer to plate again.
5.finish sauce with butter and lemons. once butter melts, pour sauce over chicken.
6.garnish with fresh parsley and serve.

this is great with couscous or mashed potatoes. also serve with a green veggie.

Cheese Tortellini & Butternut Squash
~?~
3 cups butternut squash, peeled and cubed
1 pound (or close) frozen cheese tortellini
4 slices bacon, cut into small pieces
5 tablespoons butter
1 teaspoon sage
1/4 cup dry white wine
1 tablespoon sugar
juice of one lemon
chopped fresh parsley for garnish (optional)
freshly ground black pepper


1.cook squash in a saucepan of boiling salted water for 3 minutes. add tortellini and cook according to package directions. drain and set aside.
2.brown bacon in skillet until crisp. remove to paper towels.
3.melt butter in skillet. add sage and cook until butter browns. stir in wine and sugar. cook 1 minute. add tortellini, squash, and bacon. toss to heat through.
4.finish by topping with lemon juice, parsley, and pepper.

this is wonderful by itself, but you could pair it with a salad if you'd like.

I would have to go with the Chicken Picata, Oh so good. In the market they now have steamer bags that go in the Microwave with which you can steam cook just about anything, in a pinch you can toss some frozen veggies (we like green beans) in the bag with maybe a bit butter and micro away, They taste very good and even better without the butter then just add perhaps rice pilaf on the side with that dish and that you can make from a box.
