Does anyone have an original recipe for Macaroni Salad?!
Answers: All the ones I looked up in the internet have buttermilk or vinager in it. I'm looking for the one that has celery, carrots, black olives and mayo. But I don't know if there is anything else that goes in it.Like any other veggie or some other spice. Just a simple macaroni salad. THANKS
Everyone has their own version of macaroni which is special with their family. Cook, drain, rinse, and cool any kind of pasta you like. (I often use a mixture of shells, bowties, ziti and any others I like) You can use the vegetable ones too, the green and orange pasta.
The things I add are: diced onion, diced celery, chopped hard boiled eggs, celery seed, minced garlic, black pepper, diced dill pickle OR sweet pickle relish, mayo, and a well drained can of green peas.
I'm getting hungry just thinking about it!
Ingredients
1 bag small macaroni noodles
1 sm can diced olives
6 eggs hard boiled
approx 1 cup mayo
approx 1/4 cup mustard
dill pickels with some juice
salt.
pepper
Directions
boil the eggs
cook the pasta
cut pickles into tiny cubes (as many as you prefer)
mix together mayo and mustard (you can use as much as you prefer...I usually just guess)
Add a little pickle juice to mayo mix.
Once eggs have cooled dice them
Drain pasta and put into bowl
Add most of mayo mixture and stir
Add rest of ingrediants and mix all together adding salt and pepper to taste.
Add rest of mayo mix to keep salad from drying out.
*Note: If used next day may need to add more mayo and mustard cause it tends to dry up a little!
Macaroni Salad
1 package salad macaroni
3 ribs celery - chopped
1/2 onion - chopped (you can add a whole onion if it's small)
1 small can of sliced olives
mayo to taste
1 cup grated cheddar cheese
Salt and Pepper
Cook the macaroni according to package directions and let cool. Add some mayo to the macaroni so they don't all stick together. Add celery, onion, olives and put more mayo to taste. Salt and Pepper to taste. Add grated cheddar cheese. If more mayo is needed, you can add more.
Best served the next day so the flavors can meld together.
You could add carrots to this, just chop up some or grate some carrots and add them in.
