Gradually stir in milk and half-and-half. Cook, stirring constantly, until mixture boils and thickens, about 2 to 3 minutes. Remove from heat and add paprika, pepper, and 2 cups of the cheese; stir until cheese is melted and sauce is smooth. Combine sauce with the macaroni and add salt to taste. Place in a buttered 1 1/2-quart casserole dish. Garnish top with remaining 1/2 cup of cheese and dot with additional butter. Bake 25 to 30 minutes.
Serves 4 to 6.

I make a roux with flour and butter, then stir in my milk. Cook on low until it's nice and thick, then stir in enough cheddar cheese to make it a nice color and mild cheese flavor. I mix this with my cooked macaroni and pour into a baking dish, then put a layer of American cheese slices on top. Bake all at 350 degrees for 45 minutes.

Sorry, I don't measure anything. Find a good recipe for bechamel or white sauce and play with it to suit your taste.

We use Velveeta cheese, and any kind of pasta.. we don't usually measure anything, we just kinda go with how it looks..
first boil some noodles, (obviously)
Then while there boiling cut up some Velveeta, so it melts quicker..
when noodles are done, drain them then add the cheese, and some milk, and a spoonful or two of sour cream. then maybe some garlic powder or parsley, or whatever you like.
we like to cook some broccoli in with the noodles when there almost done boiling too.. and if you add some shredded chicken when its done you have a whole meal.
Enjoy

i hate those things

Meyer brand red box or homemade. Homemade, cook the macaroni til just done and drain. While you are waiting for the water to boil for the macaroni, in a heavy saucepan, spray with cooking spray for easier clean up, melt some butter or margarine. Add chuncks or shredded cheeses, I use Sharp Cheddar, mozzarella, colby/jack. Stir and add just a little milk at a time until smooth, keep warm and stir often until macaroni is done. Put the 2 together. (I add about 1/2 teaspoon of dried mustard for extra flavor in my mac & Cheese.)

I have tried many mac & cheese recipes, and this one is by far our favorite.

Vegetable oil
Kosher salt
1 pound elbow macaroni or cavatappi (see Note)
1 quart milk
8 tablespoons (1 stick) unsalted butter, divided
1/2 cup all-purpose flour
12 ounces Gruyere cheese, grated (4 cups)
8 ounces extra-sharp cheddar, grated (2 cups)
1/2 teaspoon freshly ground black pepper
1/2 teaspoon grated nutmeg
3/4 pound fresh tomatoes (4 small)
1 1/2 cups fresh white bread crumbs (5 slices, crusts removed)

Preheat the oven to 375 degrees F.
Drizzle oil into a large pot of boiling salted water. Add the macaroni and cook according to the directions on the package, 6 to 8 minutes. Drain well.

Meanwhile, heat the milk in a small saucepan, but don't boil it. Melt 6 tablespoons of butter in a large (4-quart) pot and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. While whisking, add the hot milk and cook for a minute or two more, until thickened and smooth. Off the heat, add the Gruyere, cheddar, 1 tablespoon salt, pepper, and nutmeg. Add the cooked macaroni and stir well. Pour into a 3-quart baking dish.

Slice the tomatoes and arrange on top. Melt the remaining 2 tablespoons of butter, combine them with the fresh bread crumbs, and sprinkle on the top. Bake for 30 to 35 minutes, or until the sauce is bubbly and the macaroni is browned on the top.

Note: To make ahead, put the macaroni and cheese in the baking dish, cover, and refrigerate until ready to bake. Put the tomatoes and bread crumbs on top and bake for about 40 to 50 minutes.

Look online for a crockpot recipe. They are great and super-easy!
