Sounds like you have everything you need. maybe a little chili powder and some garlic salt or regular salt & pepper would do.
The last time I made quesadilla's I sauted some peeled shrimp in a little olive oil and some season all, with alittle onion, bell pepper & Fresh minced garlic. I buttered one side of a tortilla and put it in a skillet on medium to high, I sprinkle some cheese(kraft Taco flavor) on top, sprinkled some of the shrimp mixture on that, and than topped it with another tortilla. after it browned alittle on one side I flipped it over and browned it on the other. Best way to cut them is with a pizza cutter.

I make a taco lasagna with these ingredients. Use the tortillas as noodles, layer the meat, cheese, salsa, then noodles. Bake it till brown & bubbling with some more slasa and cheese on the side. It turns out nice. You could also layer in refried beans or rice too.
