Roasted red pepper and sun-dried tomato soup questions.?!


Question: I am going to make roasted red pepper and sun-dried tomato soup. However, all the recipes I can find say NOT to use sun-dried red peppers that are packed in oil. Why is that? That is the kind I have. Will it ruin the soup if I use them?

It may make your soup oily if you make a broth based soup. However, if it is a cream based soup and you thicken your soup with a roux, it will be fine and not separate.

An alternative would be to drain the sun-dried red peppers in a strainer and rinse them with cold water.

I would think it would make the soup too oily.
