DONT FORGET TO PUT A LITTLE LIME JUICE IN IT.... MAKES A WORLD OF DIFFERENCE. ALSO, I WOULD CUT THE TOMATOES UP AND ADD THEM AS YOU GO IF YOU ARE MAKING ALOT, BECAUSE OF THE WATER CONTENT, THEY TEND TO BREAK DOWN AND GET MUSHY. I USED TO JUST SPRINKLE THEM ON TOP. IT LOOKS NICE AND THEY ARENT A MUSH MESS.
I WAS A MANAGER OF A TOP MEXICAN RESTAURANT IN NY.
KEEP YOUR RECIPE SIMPLE, IF YOU ADD TOO MANY INGREDIENTS, IT TAKES AWAY FROM THE MAIN INGREDIENT, AVOCADO!!
EMAIL ME IF YOU WANT MY RECIPE... ITS TOP SECRET!!LOL

Here are several that my family loves.

SALSA GUACAMOLE

Salsa:

1 can (14.5 oz) Muir Glen? organic fire roasted or plain diced tomatoes, well drained
1/4 cup chopped onion
2 tablespoons chopped fresh cilantro
1/4 teaspoon coarse salt (kosher or sea salt)
1 clove garlic, finely chopped
1 small fresh jalape?o chile, seeded, finely chopped

Guacamole:

3 ripe large avocados (about 1 1/2 lb) pitted, peeled
2 tablespoons fresh lime juice
1/2 teaspoon coarse salt (kosher or sea salt)
1/2 teaspoon red pepper sauce
1 clove garlic, finely chopped

In medium bowl, stir together salsa ingredients.
In another medium bowl, place avocados; coarsely mash. Stir in remaining guacamole ingredients. Spoon guacamole into shallow serving bowl; top with salsa.

Serve with tortilla chips as desired.

Makes 12 servings (1/4 cup each).

Tip: Look for avocados that are firm, but yield to gentle pressure. If they are not quite ripe, place avocados in a paper bag, and let ripen at room temperature.

***************SPICY GUACAMOLE
2 medium avocados
1/2 tomato, chopped
1/4 onion, minced
squeeze of lemon juice
garlic powder
salt

some chopped cilantro
1/2 jalape?o, minced
Scoop the avocado out into a bowl using a spoon. Mash with a fork. Squeeze in lemon juice, add salt and garlic powder to taste, chopped tomato, minced onion, (chopped cilantro, minced jalape?o), and mix.
Tip: To keep the guacamole from turning brown, put the seed from one of the avocados in the bowl of guacamole. It keeps the guacamole bright green.

SORRY,I NEVER AQUIRED A TASTE FOR IT

In Mexico, they slice it, sprinkle with fresh lime , chopped cilantro, garlic, and fresh salsa.

I use those same ingredients, but mash the avocados. Keeping it simple is always the best way to go when using avocados.

If your area does not have fresh cilantro, you can find coriander in the spice aisle. Use sparingly.
