How do you cook mussels and what sauce do you have with them?!

MUSSELS WITH PESTO CREAM SAUCE

4 lbs. mussels, beards removed

PESTO:

1 c. clean fresh basil leaves
1 clove garlic
1 c. pine nuts (others may be substituted)
1/2 c. olive oil
1/2 c. grated Parmesan cheese
Salt and pepper to taste

Mix all above ingredients into food processor and puree.
In saucepan, add 1 tablespoon of olive oil, saute diced onion for 1 minute, add 1 cup of white wine.

Add pesto and 4 cups of heavy cream. Heat to a simmer. Add mussels and simmer for 10 minutes.

Serve Mussels with pesto sauce and French bread.


1 lg. onion, diced
1 loaf French bread
4 c. heavy cream
1 c. white wine

Splash of White Wine in a saucepan, steam two/three minutes discard any unopen mussels, add cream,garlic, to the residual liquor pour over mussels.
Enjoy !!!!

Steam the mussels with white wine, shallots, garlic. Steam in covered pot until shells open up. Using a slotted spoon, divide the mussels into serving dishes. Divide the liquid among the dishes. Serve with a lot of grilled french bread to dip in the sauce.
Another idea would be to cook them in mirin, with some shallots, garlic, lemon grass, Thai basil, and a little Thai green curry.
A friend of mine and I went to this little bistro in Montreal that served moules frites- steamed mussels topped with french fries. Yum! They had many ways to steam their mussels, so we ordered them four different ways, got a bottle of wine from the store next door, and had a great lunch.

All of the above are great. Above all keep it simple and don't cook them for too long.

AND DON'T FORGET A LARGE BOTTLE OF WHITE TO WASH THEM DOWN!!!!!!!!!!!!!!!!!

Mussel and bacon soup

Serves 4



Preparation time less than 30 mins

Cooking time 10 to 30 mins







Ingredients
670-895g/1 ?-2lb fresh mussels, cleaned
15g/?oz butter or margarine
4 rashers smoked bacon, derinded and chopped
1 onion, chopped
3 sticks celery, chopped
200g/7oz can chopped tomatoes
150ml/? pint stock
1 tsp fresh chopped basil
freshly ground black pepper



Method
1. Melt the butter or margarine in a pan. Add the bacon and onion and cook for 4-5 minutes.
2. Stir in the celery, tomatoes, stock and basil. Cook for about 5 minutes.
3. Add the prepared mussels, cover and cook for a further 5 minutes, shaking the pan occasionally, until all the mussels have opened. Discard any that do not open.
4. Season with black pepper.
