Anyone have a great gravy recipe?!

You can make gravy by using stock, either chicken, veggy, or beef, with some type of fat. Then season with salt pepper and other spices you like. Reduce to create a thin sauce.
If you want a thick dense gravy, mix a few tablespoons of fat (butter, bacon, etc) with 2 tablespoons of flour. Cook this for a few minutes to remove the raw flour taste. Add warm stock and season it. Add milk for milk gravy. You can add crumbled sausage to this for gravy to put on bisquits.
You can also heat stock and mix cornstarch in a cup (2 tblsps with cold water) and add to hot liquid,this is a clearer gravy. Season with salt pepper and I like to add either dry Sherry or Madiera to give it some more flavor. You can also add wine. Red for beef, white for fish or chicken

Get some jars of paste-style meat bases - chicken base, beef base, they even make pork base... Keep 'em in your fridge.

To make gravy, mix water and the meat base to taste. Add some pepper, and any other flavoring you want (you may want to add a little poultry seasoning to a chicken or turkey gravy..) Heat to boiling. In a bowl, mix flour and oil to make a thin paste. (Generally double the flour for the oil - like 1 cup flour and 1/2 cup vegetable oil). Slowly add the flour/oil mixture to the boiling liquid, stirring constantly. PRESTO - instant gravy! Keep some Kitchen Bouquet or Gravy Master on hand - this colors the gravy and adds some depth to the flavor. If you end up with some lumps, run the hot gravy through a wire mesh strainer.

This will refrigerate ok. Add a little more water to the gravy when gently reheating. But it is sooooooooooo easy, that you can make gravy in about 5 minutes any time you need it!
