1/4 c butter
1/2 c brown sugar
1/4 c orange juice
1/4 tsp orange zest
2-3 yams, peeled and cut into 2" cubes

Combine butter, brown sugar, orange juice and zest in a small sauce pan. Cook over medium heat until sugar has desolved and mixture is bubbly. Put cubed yams in a butter casserole dish, pour sauce over yams coating evenly. Bake at 350 degrees for about 1 hour or until yams are tender. Baste with sauce every 15 minutes.

Peel them, put them in a 9 X 13 pan, sprinkle with olive oil, and several garlic cloves, salt and pepper and your favorite spice ( in fall and winter, I like nutmeg)...
Bake at 375 degrees for about 30 minutes or until tender.

Isn't it cruel to eat babies?
