Easy cheesecake OR?!


Question: Trying to use some of the odds and ends I have around the house. I thought cheescake b/c I have a graham cracker pie crust and 4 blocks of cream cheese. I also have canned cherry pie filling, bananas, evaporated milk, condensed milk, any thoughts or recipes?

Here's a recipe, easy to prepare, no baking required and contains only a few of your ingredients.

Cherry Cheese Pie

- 1 (9 inch) prepared graham cracker crust
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup white sugar
- 2 cups frozen whipped topping, thawed
- 1 (21 ounce) can cherry pie filling

- In a medium mixing bowl, beat together softened cream cheese and sugar until light and fluffy.
- Fold in whipped topping and blend until mixture is smooth.
- Spread into graham cracker crust and spoon pie filling over top. - Cover with plastic wrap and chill 2 hours before serving.

Edit: I almost forgot to add, this I do sometimes with my sweetened condensed milk for it to become caramel condensed milk:
- Remove label. Place unopened can (or cans, if 2) in the bottom of a deep pot.
- Cover with water, so that it is 3 to 4 inches above the can(s). Bring water to a boil and maintain steadily for four (4) hours. Make sure that the can(s) remain covered with water, if you must refill occasionally, it's ok.
- Refrigerate. When the can(s) is/are cold, open and you will have soft and thick caramel. I usually have it with crackers and/or fruits, so yummy.

My cheesecake recipe is for a 9" springform pan, so I don't know if it will work for a pre-made pie crust, but here it is:

4 8oz packages cream cheese, softened
1 14oz can sweetened condensed milk
3 eggs
1/4 cup lemon juice
3 tbsp flour
1/4 cup heavy whipping cream.

Alternate mixing ingredients (example, mix 1 pkg cream cheese with 1 egg, then add 1 pkg cream cheese and condensed milk). Pour into crust.
Bake 50-55 minutes or until centre is set.

When cool, top with cherry pie filling.

A pie crust isn't going to be big enough to hold 4 blocks of cream cheese + other ingredients. What you can do, though, is dump the crust into the bottom of a spring form pan and add a little melted butter to it so you can press it flat.

1 c Graham Cracker Crumbs
3 tb Sugar
3 tb Margarine, Melted
24 oz Cream Cheese, Softened
3/4 c Sugar
3 ea Large Eggs
1 ts Vanilla
21 oz Cherry Pie Filling (1 cn)
Combine crumbs and margarine; press onto bottom of 9-inch springform pan. Bake at 325 degrees
F., 10 minutes. Combine cream cheese and sugar, mixing at medium speed on electric mixer until
well blended. Add eggs, one at a time mixing well after each addition. Blend in vanilla; pour over
crust. Bake at 450 degrees F., 10 minutes. Reduce oven temperatur to 250 degrees F., continue
baking 25 to 30 minutes or until set. Loosen cake from rim of pan; cool before removing rim of
pan. Chill. Top with pie filling just before serving.
