30 corn tortillas
3 lbs lean beef
2 (14 ounce) cans enchilada sauce
1 (28 ounce) can tomato sauce (larger can)
2 (14 ounce) cans diced tomatoes with mild green chilies (ROTEL)
1 onion (minced)
jarred jalapenos (do not drain juice)
1 whole garlic clove (minced)
1 cup cilantro (minced)
2 tablespoons fresh cumin (grounded up)
2 tablespoons pepper
chili powder
salt
canola oil
2 lbs shreaded Velveeta cheese (or any easy-melt cheese)
Tabasco sauce (optional)
salsa (optional)
saltines (optional)
sour cream (optional)
2 cans enchilada sauce (red or green)
2 cups diced, cooked meat (seafood, chicken, pork, or beef,)
3 cups grated cheese: Monterey Jack or sharp cheddar
One package corn tortillas

Heat one can of sauce, dip the tortillas in the sauce. Add 1/4 cup of meat, 1/4 cup cheese, and roll up. Place in oiled glass pan, 9X13".
Repeat, until all the meat and tortillas are used.
Pour the remaining sauce over the rolls. Top with cheese.
Bake for 35 to 45 minutes in a 350 degree F. oven until the cheese is melted, but not too brown. Serve with refried beans (I like Rosarita's) and Spanish Rice.
