the prawn is shrimp, princess refers to size i believe and this is the dish:

Prawns are a shrimp-like type of shellfish. Never tried it but I like chinese shrimp dishes.
Its just a fancy name given to large prawns...to make it seem you are getting something fancy...they taste the same and everthing else. When they catch them they get large and small ones, they then sort them into batches, the the largest ones get sold as 'Princess' or 'Tiger' prawns, the rest are just prawns...

Princess Prawns = Deep fried large prawns blended with special hot sauce
Fried Prawns in Pork Fat
6 frozen pacific prawns
6 paper thin slices back pork fat
Pinch each pepper, salt and sugar
Good pinch Ve-Tsin
2 beaten egg yolks
3 tablespoons cornflour
Peanut oil
Heart of lettuce leaves
Cut the shelled prawns almost through lengthwise. Remove the black intestinal lines and trim off rough edges. Flatten out each prawn. Divide it into 6 rectangular pieces, each just short of the full length of a prawn and a trifle narrower than the widest part. Mix together the seasonings and work them into the prawns. Lay them opened sides up. Draw each piece of pork fat on one side only through the beaten eggs and place it, egged side down, on a prawn. ( The eggs will hold the two together ) . Dip each portion in the cornflour, shake off excess, then dip in the egg yolks and again in the cornflour.
In a frying-pan peanut oil to a depth of 1/2 inch. When fairly hot, place the prawns in it, pork side down, and fry until golden. Turn and fry the other sides to a golden tone at a little less heat. Arrange portions on lettuce heart and serve.
Thai Dipping Sauce
1/2 cup water
1/2 cup sugar
1/4 cup vineger
1-tblspn cornstarch
1-tblspn catsup
1/4 tspn crushed red peppers
In sauce pan add sugar and water bring to boil ,add vineger,catsup,cornstarch and crushed red pepper
let cool and serve
