Christmas puddings - a thought ?!


Question: Hi Folks,

OK the supermarket ones are fine usually, and it is only mid-November, but I am using my Geordie Grandmothers recipe, for a full-on set of puds for freinds & family.

Trouble is, although the basics, and nuts & cherries are in order, it calls for two cupfulls of brandy.
Sounds fine to me,

I also set fire to them with more brandy, and feel a tad guilty that this is served to children, who love it !
With white brandy sauce as well.

A dillemma, then.
I am no tee-totaller myself, but although most of the alcohol is boiled out, I'm jiggered if there is any proper alternative.

Any notions as to keeping everyone happy with my puds ?

You don't need to worry about alcohol that has been cooked or flamed, it evaporates at a low temperature and all you have left is the flavor.I do not know how you prepare the sauce but if there is likely to be alcohol left in it then why not simply serve double cream to the children with their pudding?
Of course, if you have any tee-totallers coming for dinner, they can be hard to convince or may object to even the flavor of brandy being present, if so then either buy a small alcohol free pudding for them or make a small one using grape juice and a teaspoon of extra sugar for them. It's a pity because our Geordie nanas knew what they were doing at Christmas.

Before you serve it put some coins in - brings a bit of excitement as to who gets the £1 coin.

Are you sure it said 2 cup fulls and not 2 cap fulls. " cups seems excessive to me

If you don't want to put any alcohol in at all, use milk instead to get the consistency right. As for the brandy sauce, either serve custard, or a plain white sauce finished with plenty of butter in it to give a rich flavour. However the alcohol content that you are actually serving is minimal and wouldn't have thought too many folk would object to it. Seems a shame to spoil a perfectly good recipe!
A good alternative for the kids I've found, is sticky toffee pudding
