Soy sauce is a fermented sauce made from soybeans, roasted grain, water and salt. The sauce, originating in China, is commonly used in widely in East and Southeast Asian cuisines and appears in some Western cuisine dishes.

Worcestershire sauce is a widely used fermented liquid condiment originally manufactured by Lea & Perrins, in Midland Road, Worcester, England. Heinz, who now manufacture "Lea & Perrins Worcestershire Sauce" list ingredients on the label: malt vinegar (from barley), spirit vinegar, molasses, sugar, salt, anchovies, tamarind extract, onions, garlic, spices, and flavouring. It is a flavouring used in many dishes, both cooked and uncooked, and particularly with beef. It is an important ingredient in Caesar salad and in a Bloody Mary. Lea & Perrins supplies it in concentrate form to be bottled abroad.

I would stick to what the recipe calls for.

If you are going to make a stir fry, you want to stick with the asian sauce. Not the European sauce. I only use Worchestershire on meat. Soy sauce should always be used in Stir Fry.

Worcester is much more highly spiced than Soy Sauce. There would be a big difference if you used it like soy sauce.
