4 cups (1 pound) elbow macaroni
5 tablespoons unsalted butter
4 cups milk
1/2 medium onion, stuck with 1 clove
4 cloves garlic
1 bay leaf
3 sprigs fresh thyme
1 teaspoon dry mustard
2 tablespoons all-purpose flour
2 cups grated Cheddar, plus 1 cup in big chunks
1/2 cup grated Parmesan
Kosher salt and freshly ground black pepper


Cook the macaroni in a large pot of boiling salted water until done, about 5 to 7 minutes. Drain and toss it with 2 tablespoons butter; set aside.
Heat the oven to 350 degrees F.

Coat a large baking dish with 1 tablespoon butter and set it aside. Put the milk into a saucepan and add the clove studded onion, garlic, bay leaf, thyme, and mustard. Warm over medium low heat until the milk starts to steam, about 10 minutes. Remove from the heat and let the flavors infuse while you make the roux. In a large pot over medium heat add 2 tablespoons butter and the flour. Cook, stirring, for about 2 to 3 minutes; don't let the roux color. Strain the infused milk onto the roux, whisking constantly to avoid lumps. Cook, stirring often, for about 5 minutes until the sauce is thick. Remove from the heat and add 1/2 the grated Cheddar and 1/2 the Parmesan; stir until it is melted and smooth. Taste and adjust seasoning with salt and pepper. Pour this over the macaroni, add the chunks of Cheddar, and mix until well blended; put this into the prepared baking dish. Sprinkle the remaining Cheddar and Parmesan cheeses evenly over the top. Bake until the top is golden and crusty, about 25 to 30 minutes.

1 teaspoon kosher salt

10 ounces sharp cheddar, shredded

In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat.
Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy.

12 ounces sharp cheddar, shredded
1 teaspoon kosher salt

Topping:
3 tablespoons butter
1 cup panko bread crumbs

Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
Remember to save leftovers for fried Macaroni and Cheese.

get a pot of macaroni noodles, chop up a stick of butter and place the peaspoons of butter around with the noodles. Then spread shredded cheese every where, add a little milk, and whallla!! enjoy.. oh yeah and bake for 30 min. for 425

Shredded cheese, or slices melted in a pot on the stove until creamy. Add milk if you want to make it even creamier. Salt and Pepper. Pour it over cooked pasta.

1 lb. macaroni, boiled al dente, according to pkg. directions

Heat the milk and cream together in microwave. Melt butter in large saucepan, then add all the flour stirring constantly. Let cook for 4-5 minutes, continuing to stir. Remove from heat and add warm milk and cream while whisking -- if sauce is too thick, add a touch more milk. Add cheese to white sauce and stir. (Save a bit of cheese for the topping.) Stir sauce into macaroni and place in a buttered casserole dish. Place in 350° oven until slightly brown and bubbly on top -- 25-30 minutes.

When I make my Mac and Cheese, I use a few different kinds of cheese. I use Colby Cheddar as the main cheese, than I use some Pepper Jack, and some Velveeta ( it gives a more creamy texture.)

you'll make a cream type sauce and stir most likely shredded cheddar cheese into it. it's not too difficult. good luck!

I use 1/2 pint milk, a teaspoon of butter and mix 2 teaspoons cornflour with a little milk. Heat the milk and butter, add the cornflour and milk paste and heat stirring till thickened and boiling. Add a large handful of grated cheese like cheddar (the stronger the better!) Add salt & pepper to taste then mix with the cooked macaroni. For an extra good taste, put in a dish and sprinkle withextra cheddar and grill fora few minutes!

What grandma did was boil the macaroni and drain it
then she would layer it in a greased Pyrex dish, put some macaroni,then some grated new york cheddar sharp then a little flour then repeat till topped off .Then add some milk to cover the macaroni. Then top it with more shredded new york cheddar sharp and bake it in an oven at 350 degree for an hour.

Homemade mac and cheese

5 cups cooked macaroni (8 ounces raw)
4 tablespoons butter
4 tablespoons flour
1/4 teaspoon salt
1/8 pepper, or to taste
2 cups milk
3/4 cup shredded sharp Cheddar cheese

PREPARATION:
In a saucepan, melt butter over medium-low heat. Stir flour into the butter until smooth and bubbly. Stir in salt. Gradually add milk, stirring constantly. continue to cook, stirring constantly, until thickened.

Add cheese and continue to cook and stir until melted. In an 8x10-inch baking dish, alternate layers of macaroni and cheese sauce. Sprinkle with paprika, if desired. Bake in a preheated 350° oven for 20 minutes, or until hot and bubbly.

Velveta, macaroni noodle, butter, (meat if you want, maybe a spice or two)melt the cheese with the noodles, put it in a casserole dish and bake it so the cheese on the top gets kinda crusty. If you want more texture throw some bread crumbs in there.

The French chef who invented mac and chez died and he didn't leave the recipe. Kraft is the only company that makes it now.

The easiest cheese to use for this is Velveeta. It melts really nicely and you don't have to add any milk or anything to it if you don't want to.
