Best pie apples are granny smiths or pippins, hands down. I usually use the grannies, they are bigger so I have to do less coring.

Trust me on this, I living in the middle of USA apple growing country and have baked many pies with every apple imaginable. Use grannies.

Cortland is a very good kind, but Golden Delicious, Empire, and Baldwin are also good for making apple pie.

My favorites are Golden Delicious. I just can't stop eating them :) And my favorite apples for pies are either ones I pick from an orchard, or ones that are locally grown and sold at farmer's markets. Somehow they just taste better to me!
