Only secret to add is try not to overcook. Let it simmer and bake on it's own covered, just before. Tricky but like most meat it will cook after off the heat source... fish are even harder to predict!

Use Panko bread crumbs. Soak the chicken in buttermilk for at least 1 hour; I soak mine for three. Remove from buttermilk, let excess drain off pieces, and dredge in flour, then in egg wash, then into the Panko crumbs - fry.

soak the chicken in buttermilk in the fridge for 1 hour, then drain.

roll in plain flour which is mixed with salt & pepper

then dip in a well-beaten egg with some worchestershire sauce and garlic salt

roll in crushed-up Doritos crumbs

SImple and tasty!!!

I also soak the chicken in buttermilk for an hour. For breading I use:

3 cups flour (I use self-rising, so I omit baking powder)
2 t. baking powder
3/4 t. dried thyme
1/2 t. pepper
1/4 t. garlic powder

Mix dry ingredients. Add 6 T. fresh buttermilk and mix with fingers until it resembles coarse, wet sand. Remove chicken pieces from buttermilk, dredge in flour mixture, remove excess flour and cook. This recipe is for 1 whole chicken.

This recipe is fabulous if you like crispy, crunchy fried chicken. It resembles KFC extra-crispy.

I guarantee you if you try this you will never do it another way, ever.

Make an egg bath with egg, hot sauce and yellow mustard. About a tablespoon of each depending on how much chicken and how many eggs you use. Whisk this together.

On the side have some seasoned flour.

Dip in the egg bath and then the flour.

The oil you use will be hot enough when you can insert the end of a wooden spoon in it and it bubbles.

Fry each piece until done.

The hot sauce will not make it hot unless you soak the chicken in the egg bath. The mustard allows this chicken to fry up to the prettiest golden brown and the falvor is awesome!

i usualy use a mixture of flour and bread crumbs for extra crispy chicken dip chicken in a egg bath then in the mixture then refrigerate for a couple of hours then rebatter prior to cooking

I JUST saw a recipe in a magazine advertising the canned fried onions you use in the green bean casserole, to use them as a chicken batter. Looks good, too!

French's Crunchy Onion Chicken
Prep time: 5 min.
Cook time: 20 min.

1-1/3 cup French's French Fried Onions
1 lb. boneless skinless chicken breasts
1 egg, beaten

Crush french fried onions in plastic bag. Dip chicken into egg, then coat in onion crumbs. Bake 20 minutes at 400 degrees until cooked through.

1/4TSP,THYME
1/4cupSALT
1/4TSP.PAPRIKA
1OZ.AC'CENT(flavor enhancer)
1/4tbsp.cayenne
1tbsp pepper
1/2tbsp,cumin
1tbsp.oregano
1egg
1/4cup milk
chicken pieces

mix all dry ingred.together.Beat eggs and milk.For extra crispy.Dip in flour then egg then flour again.Deep fry in veg.oil.Until golden brown.Cool well on paper towels and freeze.Roast in 350F oven for 30-45 mins.

Fried chicken is one of the easiest things to fix. I've been making it for years. Of course we all try to make our mother's fried chicken. So I used her easy but delicious recipe and changed just a little and found this to die for chicken.

Mix egg, soy sauce, little grd ginger
small bowl of plain white flour
larger bowl of white and wheat flours, garlic powder, season salt, onion powder

Dip chicken in flour, then egg mixture, then seasoned flour mixture. Deep fry in electric skillet with lid on. Drain on paper towels.

Keep it simple. Soak you chicken in buttermilk for two or three hours. Season flour well . Dip chicken into flour... shake off excess flour.

Use clean Crisco in a deep skillet. You'll know when your oil is hot. Fling a little water on it... when it sizzles, it's hot. This is important. If the oil is not hot enough, the chicken will be soggy. But don't burn yourself.

Brown chicken until golden, turning just once. Don't crowd it in the pan. Transfer to a platter and keep in a warm oven until the other pieces have been fried.

Peppered Cream Gravy..

Drain off the grease except one or 2 teaspoons...and leave those lovely little bits and pieces. Lightly sprinkle some flour over this.. and stir over low heat until you have a nice paste. Then slowing add a cup of milk... stir, stir, stir. Add more milk if it's too thick. Now add lots of ground black pepper.

Don't forget the buttermilk biscuits. I'll be over around 7:00. Is it okay if I dress casually?
