Chocolate Chip Banana Muffins never work!?!


Question: I have been trying to make chocolate banana muffins for a while now, and they always turn out very flat and heavy; never light and fluffy. They also have a brown swirl throughout them, which i assume is from the banana. I barely mix the mixture trying to avoid over mixing, but nothin seems to work! I have tried several different recipes.

Try tossing the chips in a little flour before you add them to mixture. This will help them stay suspended in the muffins. Also, be sure to add the chips at the very end, after all of the ingredients have been mixed together, and right before you scoop the mixture in the baking tin.

Add some yeast

DUh...your supposed to use the banana peels

Don't listen to CC, banana peels wth?
Be light on the chocolate chips, you don't want to over do it. Try mixing some more, don't be AFRAID!

Your baking soda or baking powder might be old.
