French Toast
Lamb chops

Chuck roast + BBQ sauce + cook for 8 hours in a crock pot = yummy dinner.

I dont know about lunch
but for dinner, we're going to a nice resturant for my brother's Bday

Pancakes, eggs sunny-side up (not runny!), toast w/grape jelly and some folgers coffee.

BTW, I have off this monday, so that's why it's not blueberry oatmeal..haha.

Dinner? Stir-fry with whatever I can find in the fridge.

Here are a few I make that are easy. Hope you enjoy.


Apple raisin french toast bake---- Really good & easy!!!

INGREDIENTS
1 cup brown sugar
1 teaspoon ground cinnamon
1/2 cup butter, melted
3 apples - peeled, cored and sliced
1/2 cup raisins
1 (1 pound) loaf French baguette, cut into 1 inch slices
6 eggs, lightly beaten
1 1/2 cups milk
1 tablespoon vanilla extract
3 teaspoons ground cinnamon



DIRECTIONS
Grease a 9x13 inch baking dish. In a large bowl, mix together brown sugar and 1 teaspoon cinnamon. Mix in melted butter. Stir in apples and raisins until evenly coated. Pour into prepared pan. Arrange bread slices in an even layer over apples.
In the bowl, whisk together eggs, milk, vanilla and 2 teaspoons cinnamon. Pour over bread, making sure every slice is fully soaked. Cover with aluminum foil, and refrigerated overnight.
Preheat oven to 375 degrees F (190 degrees C). Remove dish from refrigerator while the oven is heating. Bake covered for 40 minutes. Remove cover, and bake 5 minutes. Let stand 5 minutes before serving.


Breakfast casserole

INGREDIENTS
1 (10.75 ounce) can condensed cream of chicken soup
1 (16 ounce) container sour cream
1 (2 pound) package frozen hash brown potatoes, thawed
1 cup cubed, cooked chicken meat
1 cup diced ham
1 onion, chopped
3/4 cup shredded Cheddar cheese
1 cup crushed potato chips
1/4 cup butter, melted



DIRECTIONS
Combine undiluted soup, sour cream, hash browns, cubed chicken and ham, onions, and cheese. Pour into a lightly greased 9 x 13 inch pan.
Bake at 350 degrees F (175 degrees C) for 30 minutes. Top with crumbs, and drizzle with melted butter or margarine. Bake for another 15 minutes.

Slow cooker chicken

INGREDIENTS
6 skinless, boneless chicken breast halves
1 (10.75 ounce) can condensed cream of chicken soup
1 cup milk
4 ounces sliced ham
4 ounces sliced Swiss cheese
1 (8 ounce) package herbed dry bread stuffing mix
1/4 cup butter, melted


DIRECTIONS
Mix together the cream of chicken soup and milk in a small bowl. Pour enough of the soup into a slow cooker to cover the bottom. Layer chicken breasts over the sauce. Cover with slices of ham and then Swiss cheese. Pour the remaining soup over the layers, stirring a little to distribute between layers. Sprinkle the stuffing on top, and drizzle butter over stuffing. Cover, and cook on Low for 4 to 6 hours, or 2 to 3 hours on High.

Chicken enchilada--- slow cooker---Yummy!!

INGREDIENTS
12 boneless, skinless chicken thighs or breasts
3/4 (26 ounce) can condensed cream of chicken soup
4 cloves garlic, chopped
3/4 (16 ounce) container sour cream
3/4 (7 ounce) can diced green chile peppers
12 flour tortillas
2-3/4 cups and 1 tablespoon shredded Monterey Jack cheese
3/4 (10 ounce) can sliced black olives (optional)
chives for garnish (optional)
black pepper to taste


DIRECTIONS
Place chicken in a pot, cover with water, and bring to a boil over high heat. Continue to boil until the chicken is done, about 10 minutes. Drain, allow chicken to cool, and cut into small pieces.
Place chicken pieces in a large bowl. Stir in soup, garlic, sour cream, and green chiles.
Spray the inside of slow cooker lightly with non-stick cooking spray.
Tear tortillas into pieces, and arrange half of the pieces in one overlapping layer across the bottom of the slow cooker. Arrange half of the chicken, half of the soup, and half of the cheese on top. Repeat with remaining tortillas, chicken, soup, and cheese. Top with black olives.
Cook on Low setting for 3 to 4 hours. Top with chives.

5-fruit smoothie/shake for breakfast
chicken stir fried noodles with shrimp dumplings and some spicy fish with tofu for lunch (lots and lots of tea)
bbq ribs with green salad with blue cheese dressing and buttered baked potato for dinner, ice cream dessert ( with beer)

for dinner- RED BEANS AND RICE, its like a totally awesome new orleans dish!!!!!!!!!!!!!
