Chicken Italiano Skillet
1 lb. boneless skinless chicken breasts, cut into bite-sized pieces
1 green pepper, chopped
1 small onion, cut into thin wedges
1 can (14-1/2 oz.) diced tomatoes, undrained
1 cup water
1 pkg. (14 oz.) pkg. Macaroni & Cheese Dinner
SPRAY large skillet with cooking spray. Add chicken; cook and stir 5 min. on medium-high heat. Add green pepper and onion; cook 5 min. or until chicken is cooked through and vegetables are tender. STIR in tomatoes, water and Macaroni. Bring to boil. Reduce heat to low; cover.
SIMMER 10 min. or until macaroni is tender, stirring twice. Stir in Cheese Sauce until blended.

1 pound gnocchi-shaped pasta (such as cavatelli) or shell pasta

3 tablespoons olive oil
1 large red onion, halved, sliced crosswise
4 skinless boneless chicken breast halves, cut crosswise into 1/3- to 1/2-inch-thick slices
4 teaspoons chopped fresh rosemary
1 head of curly endive, trimmed, very coarsely chopped (about 12 cups)

1 1/2 cups crumbled blue cheese (such as Maytag; about 9 ounces)
3/4 cup coarsely chopped toasted walnuts (optional)
Preparation
Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally.

Meanwhile, heat oil in heavy large deep skillet over medium-high heat. Add onion; sauté until slightly softened, about 4 minutes. Sprinkle chicken with salt and pepper; add to skillet with rosemary and sauté until chicken is almost cooked through, about 4 minutes. Add endive; toss until slightly wilted and chicken is cooked through, about 1 minute.

Drain pasta, reserving 3/4 cup pasta cooking liquid. Return pasta to pot. Add chicken mixture, blue cheese, and enough pasta cooking liquid to moisten; toss to blend. Season with salt and pepper. Transfer to large bowl; sprinkle with nuts, if desired.

mac and cheese with chicken and broccoli

1 pound skinless boneless chicken breasts
Olive oil (for brushing)
2 heads of broccoli, cut into florets (about 5 cups)

2 tablespoons (1/4 stick) unsalted butter
2 tablespoons all purpose flour
4 cups whipping cream
1 cup grated Fontina cheese (about 4 ounces)
1 cup grated cheddar cheese (about 4 ounces)
1 pound pasta shells, freshly cooked
1/2 bunch fresh chives, chopped
Preparation
Prepare barbecue (medium heat). Sprinkle chicken with salt and pepper. Brush both sides with olive oil. Grill until cooked through, about 6 minutes per side. Dice chicken and set aside. Cook broccoli in medium pot of boiling salted water until crisp-tender, about 3 minutes. Set aside.

Melt butter in heavy large saucepan over medium heat. Add flour and cook 2 minutes, stirring constantly. Gradually mix in cream. Bring to boil, reduce heat, and simmer 10 minutes, stirring frequently. Add both cheeses and stir until sauce is smooth. Season to taste with salt and pepper. Add pasta, chicken, and broccoli to sauce; mix well. Garnish with chives and serve.

ITALIAN BAKE

3 lb chicken breast
6 italian sausage links
2 jars spaghetti sauce
1 lb package penne pasta
1 large pkg pizza cheese
1 onion
bell peppers all colors

Cook the chicken cut up, onions, peppers, and sausage cut up. Drain.
Boil penne pasta, then drain. Mix the pasta, sausage, onion, peppers, chicken and sauce.

Put it in a large, deep dish. Top heavily with cheese.

Bake at 325 for about 45 min or until golden and bubbly.
