I have tried many recipes for chicken tenders, but I just can't find one that is really extra crunchy.?!

Crunchy Chicken Dippers
2 eggs
2 lb. boneless skinless chicken breasts, cut into 1-inch wide strips
4-1/2 cups POST HONEY BUNCHES OF OATS Cereal, finely crushed
PREHEAT oven to 375°F. Beat eggs lightly in shallow dish or pie plate. Dip chicken in eggs, turning over to evenly coat both sides of each strip. Coat chicken evenly with cereal. Place in two 15x10x1-inch baking pans sprayed with cooking spray.
BAKE 25 min. or until chicken is cooked through.

Try PANKO (Japanese) bread crumbs
or Sun Chips...

1 cup buttermilk
1 1/2 pounds chicken tenders
3/4 cup Panko crumbs or Sun Chip crumbs

Preheat the oven to 500 degrees F.

Brush 1 tablespoon of oil onto baking sheet(s). Place the buttermilk in a large bowl. Add the chicken tenders and stir to coat. Let stand at least 15 minutes and up to 30 minutes.
Stir the crumbs in a pie dish. Remove the chicken tenders from the buttermilk and dredge them in the crumb mixture to coat completely, pressing to adhere. Arrange the coated chicken tenders on the prepared baking sheets, spacing evenly. Drizzle 2 tablespoons of oil over the chicken tenders and bake until they are cooked through and golden brown, about 15 minutes.

make sure your grease is hot enuff. coat the chicken well with the egg so the flour sticks better and the longer you leave them in the pan the crunchier they will be. I make fried chicken all the time and we all like the crunchy skin

we make chicken extra crispy by dipping them in the egg, then the flour mixture (sometimes I use bread crumbs too) and then back into the egg, and then the flour again. Makes your hands really messy, but chicken turns out delicious!!!

I found that adding corn starch to my flour made my chicken crispier. I do half flour, half cornstarch now.
