Any great apple bread recipes?!


Question: I have some left-over apples, and I want to make some apple bread. The last recipe I tried was very dry. Do any of you have a great recipe for a moist apple bread?

Apple Bread

Bake: 45 min.

Ingredients
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon baking powder
3 eggs, beaten
3 cups shredded, peeled cooking apples (4 medium)
2 cups sugar
2/3 cup cooking oil
1 teaspoon vanilla

Directions
Grease and flour three 7-1/2x3-1/2x2-inch or two 8x4x2-inch baking pans. Set aside. In a medium bowl combine flour, soda, salt, cinnamon, and baking powder; set aside.

In a large bowl combine eggs, apples, sugar, oil, and vanilla. Stir in flour mixture just until moistened. Pour batter into prepared pans. Bake in a 325 degree F oven for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes. Remove from pans. Cool on wire racks. Wrap and store overnight before slicing. Makes 30 servings.

Note: Golden Delicious, Rome, Granny Smith, Jonathan, or Newtown Pippin apples are a good choice for this bread.

Praline Apple Bread
Prep: 20 min.
Bake: 55 min.

Ingredients
1 cup granulated sugar
1 8-ounce carton dairy sour cream
2 eggs
2 teaspoons vanilla
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1-1/4 cups chopped, peeled tart apples
1 cup chopped pecans
1/4 cup butter or margarine
1/4 cup packed brown sugar

Directions
1. Grease a 9x5x3-inch loaf pan. In a large mixing bowl beat together granulated sugar, sour cream, eggs, and vanilla on low speed of an electric mixer until combined, then beat on medium speed for 2 minutes.

2. Stir together flour, baking powder, soda, and salt; add to sour cream mixture, beating on low speed until combined. Stir in apple and 1/2 cup of the pecans. Turn into prepared loaf pan. Sprinkle with remaining chopped pecans; press lightly into batter.

3. Bake in a 350 degree F. oven for 55 to 60 minutes or until a wooden toothpick inserted in center comes out clean. (If necessary, cover loosely with foil the last 10 minutes of baking to prevent overbrowning.) Cool in pan on a wire rack for 10 minutes.

4. Meanwhile, in a small saucepan combine butter or margarine and brown sugar; cook and stir until mixture comes to a boil. Reduce heat and boil gently for 1 minute. Remove bread from pan. Drizzle top with brown sugar mixture; cool. Makes 1 loaf (18 servings).

Make-Ahead Tip: Up to 1 day ahead, make, bake, and cool loaf as directed. Cover and store at room temperature.

Apple Pie Bread
Prep: 35 min.
Bake: 1 hr.

Ingredients
1/2 cup butter, softened
1 cup sugar
1/4 cup buttermilk or sour milk*
2 teaspoons baking powder
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
1/2 teaspoon salt
2 cups shredded, peeled apple (about 4 medium)
1 cup chopped walnuts or pecans
1/2 cup raisins
Streusel-Nut Topping

Directions
1. Preheat oven to 350 degrees F. Grease the bottom and 1/2 inch up the sides of an 9x5x3-inch loaf pan; set aside.

2. In a large bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Beat in sugar until combined. Add buttermilk and baking powder; beat until combined. Add eggs and vanilla; beat until combined. Add flour and salt; beat until combined. Stir in apple, nuts, and raisins.

3. Spoon batter into prepared pan; spread evenly. Sprinkle Streusel-Nut Topping over batter. Bake for 60 to 65 minutes or until a wooden toothpick inserted near the center comes out clean.

4. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack. Wrap and store overnight before slicing.

5. Makes 1 loaf (14 servings)

6. *Note: To make 1/4 cup sour milk, place 3/4 teaspoon lemon juice or vinegar in a glass measuring cup. Add enough milk to make 1/4 cup total liquid; stir. Let mixture stand for 5 minutes before using.

7. Streusel-Nut Topping: In a small bowl, combine 1/4 cup packed brown sugar and 3 tablespoons all-purpose flour. Using a pastry blender, cut in 2 tablespoons butter until mixture resembles coarse crumbs. Stir in 1/3 cup chopped walnuts or pecans.

Apple Cinnamon Oatmeal Bread.

If you go to www.verybestbaking.com, they have tons of recipes. This is one of my recipes that I just love especially at this time of year. I would put the recipe here for you, but, I don't have a copy of it with me right now.

This bread is a quick bread that uses chunky applesauce and instant oatmeal. It is very moist and I am sure you will love it. It is great with Pumpkin Cream Cheese too.

PUMPKIN CREAM CHEESE

8 oz Cream Cheese
8 oz canned Pumpkin
1 Tablespoon Pumpkin Pie Spice
3 Tablespoons Brown Sugar

Mix all together and serve.

**In reference to the apples you already have. Chop them up and use them. I have been known to make my own applesauce. Core, peel and chop your apples. Cook over low heat with sugar (To sweeten). Your apple sauce is done when the apples are fork tender.
