Whats a good, cheaper, substitute for Goat Cheese in a recipe?!
Answers: I am making this recipe in bulk. It's stuffed pork tenderloin. The stuffing calls for fruit, prosciuitto and goat cheese. Since I am making so much of it, the goat cheese will get expensive. Any cheaper suggestions that will go well? Thanks!
For the recipe you're using, you could go with ricotta cheese. It's cheap and can be purchased by the tub. It mixes well and can be stuffed into your loin without causing too much headache.
If you want to reduce your costs even further, try cooked bacon or ham pieces instead of prosciutto as prosciutto can get become expensive.
This is a silly question, but you thought about purchasing the original ingredients in bulk at a store like Costco? You can usually purchase twice as much for the same price or even less and freeze any unused portions.

Feta, Mascarpone, Brie, Mozzarella...any creamy cheese for that matter!
Mozarella isn't a creamy cheese but it would go fantastic if you chose it.
Goat cheese has such a specific flavor, it is difficult to find something that equals it.
Feta cheese would be okay, but not quite the same, and it still costs quite a bit.

Keep in mind that goat cheese has about 1/2 the fat content of cheese made from cows milk. Sounds like the recipe calls for a lot of cheese (otherwise your cost comments would not be an issue). I would honestly try to stay with goat cheese. You will end up with a lot more fat in your dish if you use a cows cheese and that would not be a good thing either. Perhaps you can find an inexpensive chevre. I live near New York City, and have a lot of ethnic grocery stores that sell good cheese at a fair price. I can find a nice chevre for $6/lb. Not the cheapest but a good price for good cheese.
Some of the other cheeses that I would use if I had to switch were mentioned (namely feta). A goof feta will cost you close to the same price as a good goat cheese however.
Mascarpone was mentioned above, and as much as I love Mascarpone, It is not a substitute for goat cheese. It is also more expensive. And Brie would certainly not be a substitute (think about it.....how would you mix it in??)

You could mix some herbs into cream cheese and use that. It's very soft and slightly salty. Once it's mixed together roll it into a log and wrap in plastic wrap to refridgerate until it's firm again.
Think about what other cheese would go with the proscuitto. I sometimes substitute Boursin cheese or Aloutte. Boursin though is $8 a tub. You could make stuffed pork chops instead.
