I started thawing chicken legs to thaw this morning so I can make for dinner tonight...?!


Question: I was thinking I would sautee them for a bit, then put them in the oven to bake. I was going to make creamed spinach as the side. What should I bake them chicken with (potatoes, broccoli, etc)?

Make some garlic herbed mashed potatoes. Boil your potatoes and mash them, add olive oil, (several tablespoons, until it tastes how you like and has the consistency you like). Add fresh minced garlic and dried italian seasoning. Add salt and pepper to taste. My family LOVES these potatoes. Olive oil is better for you than butter, it has the good fat and it really taste wonderful.

I like the idea of carrots too. Steam your carrots then sprinkle some brown sugar on them. MMMMM!

yes, put it in cold water to speed it up...well maybe luke warm - but NOT hot

how about some cauliflower and broccoli..

you can even add some cheese sauce..

I hope you didn't leave them out on the counter, but it a refrigerator.....they'll be ruined if not.

If I'm understanding your question, you want to know what to bake the chicken with? Or are you asking about a side to go with the chicken? I would bake the chicken with onions [preferably sweet like Vidalia] and potatoes. Salt and pepper chicken, potatoes and onions. Cover and cook about an hour. Remove cover last 10 to 15 minutes to crisp up the chicken and potatoes. Your sides can be the spinach that you mentioned also the onion and potatoes will be a side as well.

Save yourself a step. Put chicken, potatoes(cut up), whole baby carrots and celery (cut up) in a bowl and toss with a robust Italian dressing until coated well use a little Italian seasoning a sprinkle of salt and the same in pepper. Put in a casserole dish and bake uncovered until brown and crispy on the skin of the chicken and on the potatoes at 400 degrees when it looks close to done about 45 minutes, depending on your oven and size of pieces, cover it with foil as tight as you can being careful of the heat of the dish. Check it in 20 minutes, it should be done and your chicken wont be dry. If you want to still do the spinach try doing it in individual small baking dishes. Do your creamed spinach on the stove first then place in the small dishes top with shredded cheese if you want and then bread crumbs drizzled with a little butter and set under the broiler until brown. cover with foil until ready to serve. A good Chablis nothing fancy is great try Sutter home..that is if you drink wine. I can tell you what to do fro dessert if you tell what you like to work with.
