What would be a good salad dressing...?!
Answers: I am serving a simple salad of spinach and pecan pieces alongside beans and cornbread. What dressing would go well with this?
Another possibility would be to fry a couple of strips of bacon until really crispy; break them up into small bits or pieces then add your favorite vinegar to the pan grease and the pieces. I also add chopped hot red peppers.
A really simple balsamic vinaigrette would be good. Just balsamic, olive oil, salt/pepper. You could mix in a lil dijon mustard too - I think that'd be a good combo with the cornbread and beans!
SESAME DRESSING (For The Spinach Salad like Hudson's)
1 1/2 c. sugar
2 t. dry mustard
2 t. salt
2/3 c. vinegar
2 t. soy sauce
3 T. onion juice or 1/2 c. chopped onion
2 c. salad oil
3 T. toasted sesame seeds
In a food processor or blender combine sugar, mustard, salt, vinegar and soy sauce on medium speed for about 20 seconds or until completely blended. Add onion juice or onions. Blend until smooth. With the motor running on low speed add oil slowly in a thin, steady stream. Mix until thickened. Pour into a refrigerator container and stir in sesame seeds. Cap tightly and refrigerate to use within 1 month.
(Makes about 1 quart).
A Simple little vinagrette
2 parts olive oil
2 parts vinegar ( adjust amounts to your taste)
Juice of 1/2 a lime ( or other citrus),
a bit of garlic
and I love a little goat cheese on spinich as well.
*********Red Onion Salad Dressing
1/2 red onion, coarsley chopped
1/3 cup sugar
1/4 cup white wine vinegar
1/2 teaspoon dry mustard
2 tablespoons chopped herbs (you can use rosemary and
parsley if you like)
1/2 cup olive oil
Process ingredients in a blender.
(Makes around 3/4 cup. Can be refrigerated for a few days.)

**************RASPBERRY VINAIGRETTE SALAD DRESSING
3 yolks
1/4 c. Dijon mustard
2/3 c. raspberry vinegar
3 c. olive oil
1 lemon juice
2 tbsp. chopped scallions
1 tsp. salt
1 tsp. pepper (white)
1/2 c. fresh raspberries/frozen thawed
In mixing bowl place yolks, Dijon and raspberry vinegar. Whisk until blended. Slowly dribble in olive oil until incorporated, whisking continually. Add scallions and juice of 1 lemon. Salt and white pepper. Whisk in raspberries.
You will love the following dressing: 3 tablespoons of LIME juice mixed with 3 tablespoons of virgin Olive Oil, Shake well and drizzle onto the salad, Mix salad.
Nothing to complicated and something to complement the meal as opposed to overwhelm it! Consider:
1. French dressing
2. Dijon Vinagrette (in 1/2 cup olive oil blend 3 T lemon juice, 1 tsp dijon mustard, 1 tsp chopped chives, 1/4 tsp fresh ground pepper, 1/4 tsp kosher salt)
3. Balsamic Vinagrette (Paul Newman's is a nice one!)
