if you let a potato sit, it will sprout, like a bulb.

It is a root, it will sprout eyes and goes that way.

It's a classified as a rhisome. If you look, the potatoes have eyes which can sprout a new plant if the potato (or a piece of potato with eye or eyes) is planted in the ground for more potatoes.

As kids, we'd place a sweet potato in a bowl and partially cover it with water. Place it on the shelf and soon you'll have greenery growing all over.

A whole potatoe is is planted in the ground and sprouts to grow mew potatoes. You'll see this if you leave a potatoe in your cupboard for a while, it will start to grow sprouts.

When you grow potatoes, there is a big leafy plant above ground. Under ground are many white roots. The potatoes form on these roots.

Digging potatoes is one of the most rewarding gardening experiences. You smell the earth and are rewarded by finding all these yummy vegetables.

All potatoes have these little things called "eyes" all over them. To plant more potatoes, all you have to do is slice one of the eyes, (or all of them) and plant them in the soil. Soon , you will see green leaves sprouting and after the growing season is over, dig up the new potatoes you have grown. As a matter of fact, you can grow potatoes in garden mulch, large window boxes and flower pots, almost any medium that will support healthy plant growth.

You might even want to plant an eye, and grow it as a houseplant! They are real pretty.

The joy of course, is using them to make French Fries, baked potatoes, potato salad, (yum yum) or even mashed potatoes.

If you do grow some, don't be afraid to eat them. It is safe to eat home grown potatoes. There is no such thing as not being ripe. If you dig them up too soon, they are still good to eat, but they will be small.
