Best EASY fish items?!


Question: looking for easy, inexpensive ways to increase fish intake. I do like fish, just not very good at fixing it. I know how to make a canned salmon sandwich and thats about it :) .

I live on my own with just my one son so I need to be able to make small portions cost effectively and store it safely.

Fish Sticks Parmesan
These are tastier and healthier than processed fish sticks - but take almost no more time to prepare! You can use either fresh or frozen fish fillets - just be sure to thaw frozen fillets first. I use kitchen shears to cut the fish into sticks. For a fun meal, try Fish Sticks Parmesan with home made oven fries.

Preheat oven to 450F/230C.

1 egg
Beat lightly in a shallow dish.

1/3 cup
75 mL bread crumbs
Combine in a shallow dish.
1/3 cup
75 mL grated Parmesan cheese
1/2 tsp
2 mL paprika
1/2 tsp
2 mL dried parsley
1lb 500 g fish fillets
Cut into fingers (about 3 inches long and 1/2 inch wide/ 8 cm long and 1 cm wide). Dip each strip into the egg, then into the crumb mixture. Place the fish fingers on a lightly greased baking sheet. 1 Tbsp 15 mL butter, melted Drizzle over fish fingers. Bake for 7-10 minutes, or until fish flakes easily with a fork.

a tuna sandwich

1can of tuna
mayo (as much as you like)
1 stalk celery, chopped
1/4 of a bell pepper, chopped
salt and pepper
tomato's, sliced
bread

combine all of the ingredients, put it on the bread and lay slices of tomatoes on the tuna.

Fish sticks with potatoes and pickle sauce. Talapia filets with lemon pepper baked in the oven. Seafood salad-take imitation crab meat, mayo, diced onion and celery, little pepper and salt.

You can go to wal-mat (or kroger might have them I'm not sure) they sell individual portions of fish. They come in 4oz packages and only cost about a buck. They are in the frozen seafood area. I don't know if they have it where you are but all the krogers are putting in a fresh meat/seafood deli. That also a great place to buy fish at but it is a bit more expensive than the frozen stuff. Here's a receipe that I've used and my family loves. And if you can stomach the canned salmon, you a stronger man than I.

Spicy Orange Roughy

Ingred:

4 - 5 oz orange roughy fillet
1 tsp jerk seasoning, or more to taste
1 tsp cayenne, or more to taste
1 tsp evoo (extra virgin olive oil)

Place the orange toughy on a sheet of waxed paper. Sprinkle one side evenly with half of the jerk seasoning followed by half of the cayenne.

Place a medium nonstick skillet over medium heat. Add the oil. heat for about 30 seconds, or until hot. Place the orange roughy, seasoned side down, in the pan. Sprinkle the remaining seasonings over the top. Cook for 3 to 5 minutes per side, or until the orange roughy flakes easily. Serve immediately.

If you over do it on the jerk or cayenne your roughy will come out pretty spicy.

Mustard and Herb-baked Salmon

Ingred:
10 fresh tarragon leaves
3 fresh cloves
3 large fresh basil leaves
1 tbl fresh flat-leaf parsley leaves
4 to 5 oz boneless skinless salmon
2 tsp spicy brown or dijon mustard

Preheat the oven to 400 degrees. Lightly mist a small nonstick baking sheet with olive oil spray.

In a food processor fitted with a chopping blade, combine the tarragon, chives, basil, and parsley. Process until finely chopped (or chopped by hand). Place the salmon in the prepared pan. Brush or rub the mustard over the salmon. Sprinkle evenly with the herb mixture, then press it into the mustard. Lightly mist with olive oil spray.

Bake for 11 to 13 minutes or until the salmon is opaque.
