When cooking with Arugula, how do you make it taste not bitter?!


Question: Try blanching it first - this is really effective with getting rid of the bitterness. Arugula really shouldn't BE bitter (I grow my own in the spring and fall), and when it is, it's usually a sign that it's gotten a bit too big before harvest. Try to look for baby arugula, if you can find it...The spiciness of arugula shouldn't be confused with bitterness - the bitterness only comes if it's left to grow too long.

Arugula is supposed to taste bitter, love

but if you're not a big fan of the bitterness, you can always use baby arugula instead
